Trailmix and fruit and muffins.
Datenut bread spead with cream cheese and a piece of fruit.
Mini quiches, fruit and crudites.

Cheese and crackers. Beef Jerky. A beef stick, slice it as you go and eat with the cheese and crackers with some mustard. Yum! Most fruit travels well. You can do fruit roll up or gummi fruit also.
Tuna now comes in these pack that you just rip open and eat, some have flavoring added also.
You can always go to an Army Overstock and get MRE's if you're daring!!

Fruits - bananas, grapes, apples, or fruit cups if your space is limited
Veggies - carrot sticks, celery sticks, cherry tomatoes, pickles
Tuna - They sell sealed foil packages of tuna fish at the store. When you are ready for your sandwich, open the package and mix with some mayo.
Trail mix, the original pack food.
If you want more classic meat and mayo sandwiches, put an ice pack in your lunch bag and put your sandwich right next to it.

I never go on long trips without open and go food.Pringles,potted meat,squirt miracle whip,bread,catsup,vienna sausage,peanuts,cheese crackers,& pickles.Make up sandwiches for 2 out a can of either meat.If you take an ice chest and ice,anything goes,just pull over and make lunch.Remember that you will want to nibble,and don't forget water.Have a great trip.I usually go from Ca.to La.--1800 miles one way.

We just take leftovers or sandwiches of any sort in tupperware. They sit in the cooler in the backseat on top of ice packs and with the bottled water which is already cold. If you have to use bagged ice, just put whatever you make or buy in plastic containers or ziplocks.
And some plastic silverware for a rest stop, napkins, and a bag of chips.

One of my more favorite things to take as far as sandwiches go, is to take a crusty loaf of bread, and load it up with some grilled veggies, maybe some portobellos, eggplant, zucchini, etc. And for extra flavor throw on some roasted red peppers. Definitely stay away from anything mayo based for dressing, but you could use an olive oil and vinegar dressing, or even whip up a pesto style spread and slather that on your bun.
For snacks, I am inclined to go with fruits and nuts and things like that, that are high in protein and keep you full of energy!

Cold pizza. I personally love left-over pizza. Just put it in the fridge the night before you leave. By the time you eat it at lunchtime, the pizza will be at room temp, which is great for left-over pizza. Also, since it was cool/refrigerated the night before it should not spoil.

take a cooler.you can make sandwiches and put them in there and they wont spoil.this will help if you buy some bottled drinks to take along too.

try rice, crackers, some times peanut butter, pop,cookies,usually stuff with sugars in it, fruit(apples,oranges), dried fruit, nuts, sometimes lunch sandwiches if you eat it within the day
