Different types of onions have different "Strengths".....some don't seem to make you cry as easily as others. My favorite onion, with few tears but lots of flavor, is a Vidala, a sweet onion. Small yellow and white onions have always made me tear up really easy. Here is a little something that does help, though. Put the onionin a ziploc bag and then into the freezer for 15-30 minutes. Also don't chop on the root end....don't know why, but that does seem to make a difference.

To remove the smell from your hands, there are several methods. Get lathered up and pour about 1 - 2 teaspoons of salt into your soapy hands, and wash as usual. You can rinse with real lemon juice, rub your hands on a stainless steel faucet, or even use toothpaste to wash your hands......that last one works great after you've handled fish.

What I do is I have a small fan blowing the onion fumes away from me, helps with the tearing of the eyes. For the smell, rub your hands in some lemon juice, MAKE SURE YOU HAVE NO OPEN CUTS OR SORES on your hands as this will hurt like the dickens!

Run the cold water while you are cutting them and use lemon juice on your hands to dissolve the smell. You might look for better onions too the old ones seem to do that more than fresh onions. Red onions are not as bad as yellow ones..

If you place the onion in the freezer or fridge prior to cutting you won't tear up as much. As for the odor, use plastic/latex gloves while cutting. There is a liquid hand soap on the market that will eliminate the odor, but I forget what's its called. It was created by a chef though.

Chilling the onions in the refrigerator first is a must for helping with tear production. You might try wearing some gloves when chopping. You can also use a chopping device.

If you wear contacts occasionally, put them in ... before you start cutting the onion. It really works! A bit of lemon juice or vinegar will aid in getting rid of the onion smell for you. :)

rubbing your hands over the stainless steel in your faucet will dispell any lingering odors from your hands.

If the essence offends your eyes and you must peel the onions, wear a face mask that excludes the onion favor. Expensive, yes, but solves the problem.

Refrigerate your onions.

Your eyes burn because the molecules from the sulphur compounds in warm or room temperature onion disperse up into the air faster, and get to your eyes before you are done chopping.

If they are cold, you can probably get them sliced/diced before the compounds are unleashed.

Finger odor....run your fingers under cold water while rubbing your hands on an aluminum pan. I don't know why it works, but it does.

Try putting the onion in the freezer for about 20 minutes,the colder it is the fewwer the tears.Lemons will help yor hands.I worked in a produce dept.for 12 years I know all the tricks.
