I like my chicken juicy, not overcooked and tough to eat. I seal the breasts in a pan of hot oil first (helps keep the juices on the inside and keeps flavour too) then put in the oven at 180 - 200 degrees celcius for roughly 20-30 minutes. They are perfect when they come out!!!

wrap them in foil, cook at gas mark 6 in the middle of the oven for about 40 minutes, un- wrap them test with a skewer if the juices run clear then they are done if not put them back in the oven for a futher 10 minutes

I would cook them for 30mins on med high and cover them with foil and then take the foil off for last 15 mins to get the bacon crispier.

This will keep the chicken breasts moist, Otherwise it will be like chewing wood.
