Actually, you don't have to shake it. You can add the oil and the vinegar to the salad and mix the salad - saves you dirty dishes. You would shake it if you want to have prepared dressing to keep in the fridge.

When a oil or dressing is in a container, the different spices tend to seperate. By shaking the container you allow the ingredients/spices mix together again. With oil, they sometimes include some water in the container, so when you shake it allows the oil to mix back in with the water. If you still don't understand, go get a bottle of vegtable oil and pour some into a clear glass. put in some water and you will see that they seperate from each other. That is what is happing in your vinegar salad dressing. So when you shake that bottle, you actually preventing from ruining your salad with only vinegar oil because they seperate.

To emulsify the oil and vinegar- the two substances do not naturally combine so the action of shaking helps break up the oil molecules and combine the two. You could also drizzle olive oil, then vinegar, on the salad leaves and toss yourself.

They separate. The oil floats to the top. If you didn't shake it to blend it you'd be pouring straight oil on your salad. Plus, the seasonings sink to the bottom too.

Because it separates. You don't want a big glug of oil hitting yoru salad! Just shake up, then quickly pour.
To keep it together longer, add ½-1 tsp. of dijon mustard and shake.
