TUNA MAC CHEESE BAKE
8 oz. elbow macaroni
16 oz. ricotta or cottage cheese
1/2 c. chopped onion
Salt and pepper to taste
1 tbsp. basil
1 tsp. garlic powder
1 tsp. parsley flakes
2 (6 1/2 oz.) cans well drained and rinsed tuna, chunk style
1/2 c. Parmesan cheese
1 (8 oz.) pkg. peas or mixed vegetables
8 oz. shredded Jack or mild Cheddar or both (leave some for topping)
Mix all together in large bowl, place in shallow oblong Pyrex baking dish (2 x 9 x 13).
2 eggs, beaten
1 1/2 c. milk
Mix together and pour over mixture in baking dish. Add shredded cheese and sprinkle with more Parmesan. Bake at 350 degrees for 45 minutes. Lightly cover with foil, uncover for 15 minutes more until hot and bubbly and golden brown.
CREAMY TUNA NOODLE CASSEROLE
2 reg. cans water packed tuna
1 (8 oz.) elbow macaroni
1 can cream of mushroom soup
1 can cream of chicken soup
1 med. onion
1 med. green pepper
1 can mixed vegetables
1 lb. American cheese (grated)
1/2 stick butter
Optional seasonings: Paprika, pepper
Pre-cook macaroni. Saute onion and pepper in butter. Sprinkle top with bread crumbs if desired. Mix all ingredients together. Bake at 350 degrees for 35 minutes.
CHICKEN PASTA PRIMAVERA
1 c. chopped broccoli
1/3 c. chopped onion
2 cloves garlic, finely chopped
1 carrot, cut into thin strips
3 tbsp. vegetable oil
2 c. cut-up cooked chicken
1/2 tsp. salt
2 med. tomatoes, chopped
4 c. cooked macaroni shells, hot
1/3 c. grated Parmesan cheese
2 tbsp. fresh chopped parsley
Cook broccoli, onion, garlic and carrot in oil in 10-inch skillet over medium heat 10 minutes, stirring frequently, until broccoli is crisp- tender. Stir in chicken, salt, and tomatoes. Heat about 3 minutes or until chicken is hot. Spoon chicken mixture over macaroni and sprinkle with Parmesan and parsley. Yield 6 servings.

Savoury smoked chicken and chive omelette
100g/3½oz cooked smoked chicken, sliced
2 tbsp chopped fresh chives
4 free-range eggs, beaten
salt and freshly ground black pepper
25g/1oz butter
1 tsp chopped fresh chives, to garnish
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Place the chicken, two tablespoons of chives and the eggs into a bowl and season with salt and freshly ground black pepper. Mix the ingredients well.
3. Melt the butter in a small ovenproof frying pan and add the egg mixture. Gently stir the mixture while cooking for three minutes.
4. Place the frying pan into the oven and bake for five minutes or until the omelette is cooked through
5. To serve, place the omelette onto a clean plate and sprinkle the chopped chives over the top

Make macaroni and cheese and mix in the tuna or chicken.
I love to make mac and cheese, add a can of cream of mushroom soup and a drained can of tuna! Yum
You can also make a cheese omelet with what you have and add in the veggies. The veggies can also be stirred into the mac and cheese.
If you're not very hungry, just scramble up a couple of eggs.

EASY EGG NOODLE TUNA CASSEROLE
3 c. noodles
1 (6 oz.) can tuna fish, drained
1 can cream of mushroom soup
1/2 c. milk
1/2 tsp. salt
Dash of pepper
1/4 tsp. paprika
4 slices American cheese
Cook and drain noodles. Separate tuna into flakes; mix with soup, milk, and seasonings. Cut cheese slices into small pieces; add to sauce mixture. Combine noodles and tuna mixture in a baking dish. Sprinkle top with paprika. Bake at 375 degrees for 25 minutes. Makes 6 servings.

If you want a snack, eat something with protein like cheese to fill you up. Alternatively, if you're on a diet, I'd recommend eating carrots- one of the tastiest veggies ever.
As for a meal, you could eat pasta but remember to include lotsa veggies (eg. spinach). Not only will it color your meal but you would be getting your daily dose of veggies & vitamins. =)
