Sensational Irish Cream Cheesecake
Crust Ingredients:
1 3/4 cups finely crushed chocolate graham crackers
6 tablespoons LAND O LAKES® Butter, melted
Filling Ingredients:
1 cup granulated sugar
3 (8-ounce) packages cream cheese, softened
4 large eggs
1/3 to 1/2 cup Irish Cream liqueur
3/4 cup mini real semi-sweet chocolate chips
1 teaspoon all-purpose flour
Garnish Ingredients:
Whipped cream, if desired
Chocolate curls, if desired
Heat oven to 375°F.
Combine all crust ingredients in medium bowl until mixture resembles coarse crumbs. Press onto bottom and 1-inch up sides of lightly greased 9-inch springform pan. Set aside.
Combine sugar and cream cheese in large bowl. Beat at medium speed until creamy. Continue beating, adding eggs 1 at time, until well mixed. (DO NOT OVER BEAT.) Stir in liqueur by hand.
Stir together 1/2 cup chocolate chips and 1 teaspoon flour in small bowl; gently stir into cream cheese mixture. Pour batter into crust. Sprinkle remaining chocolate chips over batter.
Bake for 40 to 45 minutes or until center is set and firm to touch. (Cheesecake surface may be slightly cracked.) Cool 10 minutes. Loosen side of cheesecake by running knife around inside of pan. Cover; refrigerate at least 3 hours.
Pipe whipped cream over top of cheesecake and top with chocolate curls, if desired.
Makes 16 servings.
Variation: Sensational Mocha Cheesecake: Prepare cheesecake as directed above substituting 1/4 cup half & half or milk, 2 tablespoons cooled coffee and 1 teaspoon almond extract for 1/3 to 1/2 cup Irish Cream liqueur.

We always do Key Lime Pie in the same fashion you would do Lemon Meringue if you're looking for a green dessert. I've also done brownies with Baileys added.

Grasshopper drinks with green whipped cream and green sprinkles
2 cups vanilla ice cream
2 ounces green creme de menthe
2 ounces white creme de cacao
Put in a blender and mix completely. Use whatever whipped cream you like and mix in green food coloring to put on top. Green sprinkles should be available at the grocery soon.
For kids, chocolate chip mint ice cream with same toppings.
Have fun!!!

We call it "Green Stuff"- mix 1 pkg. instant Pistachio pudding mix, 1 container Cool Whip, and 1 can crushed pineapple together in a large bowl; chill until set- eat! You can also add mini marshmallows, shredded coconut, whatever you think sounds good- enjoy!
