I like Kenseth but I think Stewart may be a good pick.

Kenseth has the track down...... it's one of his favorites.... so he's probably the guy to beat. Stewart, Biffle, Hamlin, and ... after yesterday... Martin may have a car and team to be reckoned with.

Stewart is always a good pick, it's hard not to pick him, whether you like him or not.
And I would agree with you on Kenseth, he will be the defending race-winner at California, and it's not easy to not pick him either.
But I get the feeling that Carl Edwards is gonna make a great comeback this year, and I think he might win.

The 3 guys that stick out in my mind that get around this track very well are Kahne, Johnson and Kyle Busch. Johnson's average finish here is 8 with 3 2nds and a win. Kahne has a pole or 2, a win here and 3 top 10s in a row. Busch has the qualifying record here, a win in 2005 and has top 10s in his last 3 races at Fontana as well. I would pick Kyle for this one. His team seems to be clicking and he was running fast at Daytona until he wrecked at the end. Stewart only has 2 top 10s in his last 8 races there (22.25 average over that span). If your question is who to take between Matt and Tony, definately take Matt. He does quite well at Fontana, won there last year and has gotten top 10s in 4 out of the last 5.
Edit: Oops, my bad, Carl is pretty awesome here, as sky flyer states below (worst ever of 6th in first attempt with a 3rd and 4th last year and lifetime average of 4.4).

I believe that the win Sunday at California will come down between Kevin Harvick and Tony Stewart.
