1 large egg white
1 1/2 cups (6 ounces, 175 grams) powdered sugar
1/2 lemon, juiced and strained
Combine the egg whites and powdered sugar in a medium-size mixing bowl and whip with an electric mixer on medium speed until opaque and shiny, about 5 minutes. Add the lemon juice and continue whipping until completely incorporated, about 3 minutes. The lemon juice whitens the royal icing. The royal icing should be light, fluffy, and slightly stiff. You may need to adjust the consistency by adding more egg whites if the icing is too dry and more powdered sugar if it is too wet.

SNOW WHITE BUTTERCREAM ICING
This buttercream icing has an ideal consistency for frosting cakes. It has a firm quality making it good for wedding cake decorations and flat surface or flower nail flowers. Air dry decorations for 24 hours.
2/3 cup water
4 tablespoons meringue powder
12 cups sifted confectioners' sugar
1-1/4 cups shortening
3/4 teaspoon salt
1/2 teaspoon almond flavoring
1/2 teaspoon clear vanilla flavoring
1/4 teaspoon butter flavoring
Combine water and meringue powder; whip at high speed until peaks form. Add 4 cups of sugar, one cup at a time, beating after each addition at low speed. Alternately add shortening and remainder of sugar. Add salt and flavorings; beat at low speed until smooth.
YIELD: 7 cups icing. Recipe may be doubled or cut in half; however, if cut in half, yield is only 2-1/2 cups.

Try butter icing, it's better for piping than icing sugar and water which is of a runny consistency, making it more difficult to pipe, hope this helps.

no thats rubbish! water and icing sugar wont hold. you need roayl icing which is egg whites and icing sugar. you can now but royal icing sugar which has egg white in it, and you can add water. you they whisk it slowly with a wooden spoon, so its kinda like a meringue only because you use a spoon it doesnt contain as much air and is less fluffy, which makes it smoother. for fresh royal icing
3 egg white
500g icing sugar
whip for 10 mins with a spoon

its called Royal Icing. search www.allrecipies.com for exact amounts of ingredients to use, but keep in mind that in some areas there is a danger of salmonella from using raw egg whites. use powered instead, you find this in the baking aisle of your grocery store near the other frosting items.
