These are delicious round soft waffles with a cakey texture which keep for about 2 or 3 weeks. You can buy them 10 or 20 at a time packed in plastic containers from most supermarkets but also in celophane bags from bakeries. The only thing I know is that they are made with eggs, flour, sugar, butter and milk and that they contain 25% butter.

2 1/4 cups flour
1 cup confectioners' sugar
1 cup unsalted butter
2 egg yolks
1 lemon, zest of
1 teaspoon salt


Preheat the oven to 350º F / 180º Celsius.
In a large, microwave-safe bowl zap the butter until melted and gradually add the flour, mixing with each bit, until completely blended. Add the salt and blend well, then set aside.
In a separate bowl, beat the egg yolks. Put about 1 tablespoons aside for later. Mix the remainder of the egg yolk with the powdered sugar, and beat until the mixture starts to whiten slightly. You wouldn't think this is important, but it is. It doesn't need to bleach, it should just seem a little paler after a few minutes of beating.
Combine the two mixtures together and blend with a large wooden spoon. If it seems too crumbly or hard, moisten with the tiniest bit of water. Add the lemon zest.
In a buttered cake tin spread out the mixture with the palm of your hand, flattening the top as you go.
Using a knife or fork, trace a criss-cross pattern over the galette - just for decoration. :).
Finally, brush the egg yolk over the top of the galette to create that lovely golden look.
Bake for 45 minutes, remove from the oven. Serve fresh or cool.

You may be referring to Gaufrettes, which are waffle-textured (either crispy and thin like a pizzelle and sometimes used to make ice cream cones) or the soft, cakey, particularly richly buttered ones. "Galette" is more like a butter-rich crispy cookie, a petite beurre. The Chocolate and Zucchini blog discusses this type and provides a recipe.

Here's one for the soft, buttery waffle:

Gaufrette Recipe

Ingredients:

7 1/4 cup all-purpose flour
4 1/2 cup sugar
1 pound butter
12 large egg(s)
1 Tbsp shortening

Instructions:
Separate eggs. Put egg yolks in sugar with melted butter and shortening. Add vanilla and mixwell. Add flour a little at a time until mixed well. Beat egg whites stiff. Add to other mixture slowly until well mixed. Place in refrigerator over night. Bake in gaufrette irons (waffle maker).

The yield is high for these; you could halve the recipe if you don't want to commit to so much if you are just testing around.
