Sure can, up to about 4 months, let them defrost in the fridge for a day and then steam them as you usually would......We do it here in California all the time, especially around the holidays when everyone orders tamales for the holidays......we're still eating them until March or April......We use ZipLoc freezer bags and they're just fine......

I LOVE GRANMAS AVATAR- ok you got two pots with lids all you need now are a couple of soup bowls and 2-plates that will allow at least a 1/2 inch around the bottom so the steam can rise freely,be sure to put a layer of husks under bowl and plate add and begin to heat water -level should be just below plate-layer more husk (towards center ) to create a bed for the wrapped tamales ( note -you can wrap the tamales in parchment-paper after you wrap in the husk !-makes storage a little easier ) layer wide end towards outer edge of pot in a wind mill shape continue layers until below the edge leave enough room at top to place more softened husks and the lid leaving it loosly covered tamales will be done when you can hear the splatter of the fat and water which is also telling you NO MORE WATER DOWN HERE so tke a tamale from the top cool and taste if the masa is cooked then the others are ready if not then drizzle along the side of the pot more water and continue to cook-DO-NOT-BOIL!! WHEN THEY'RE COKKED turn of heat and let cool till you can handle then remove to a dry-husk layered platter let rest a few then enjoy ! you can store tamales in the fridge for a day (because of the lard in mix they can easily spoil very quickly ) so the best thing to do is freeze them ,place 1/2 dozen batches in freezer bags . my tamales-(family ) make em seasonably after the corn harvest which is now ! and we make so many we all are still bringing last years to compare against the new batch -THAT'S THE HONEST TRUTH! YES YOU CAN MICROWAVE BUT- my favorite way to reheat is on a cast iron skillet cover the bottom with a little lard then unwrap the tamal and heat through ( kinda taste like a thick crispy taco !!-enjoy almost forgot !!!! NO DO NOT FREEZE UNCOOKED TAMALES they'll go sour and taste like moldy-tortillas NO!
