There would be too many categories, so they generalized it and put it under Society and Culture.

Excellent question.
Yahoo Products has no less than 19 separate categories; which is only logical, so why would that not be appropriate here?
At the very least, I could see something generic, like:
Believers
Non-believers
Or, how about:
Theists
Atheists
Don't like that one? How about this:
Christianity
Islam
Secular
Hinduism
Buddhism
Judaism
Other
Those categories (not counting "other") would account for 90% of the planet's beliefs.
