I usually make up a sauce with tomato ketchup, hot sauce, soy sauce, ground celery seed, mustard and steak sauce. It's mostly tomato ketchup of course with small amounts of the others.

A great sauce for pan fried chicken and i used to do this one at my restaraunt is brandy and stilton sauce! I used to slice the breast of the chicken only on one side so to make a little pocket and stuff them with a sundried tomato and creamy goats cheese combo then seal it by wrapping a piece of parma ham or alternatively a piece of bacon! Grab a hot pan with oil in then seal the meat then whack it onto a tray and place in the oven for 35 mins at 220 degrees, bring it out, slice it in half and place onto a little mound of buttered mash potato on a plate, now for that sauce! Simply make a roux which involves a little knob of butter in a pan then adding white flour, doesnt matter self raising or plain and mix until it goes into a sandy mixture, then add sum milk and whisk over a low heat then up the heat and add milk until the sauce is thick and creamy and hot, in a seperate pan suitably a frying pan get it really hot, add a little of the white sauce or bechamel as the french call it and add a good glug of brandy, make sure the brandy catches fire with the heat of the stove, the flame should be blue, wen it goes out add a good glug of double cream, and crumbled bits of stilton, mix the whole lot together and there u have a wonderful sauce for chicken and your guests will be lovin you!

Here in the south we like gravy. You just reserve some of your pan drippings (oil) let your oil get hot, then add flour...enough to where it is a little pasty...allow this to brown...you will need to use a spoon or spatula to keep the flour paste moving so it will not scortch.....once you get the color you want......begin adding water...just a little at a time to get it to the right consistency....turn down the heat and allow to simmer a bit...add salt to taste.
you will find that when you begin to add your water....your gravy will swell and look like a lumpy mess....just keep adding water and stirring until it is smooth and not swelling anymore. It is a trial and error kinda thing....but once you get use to it, you will continue to make it....if you are cooking beef such as country style steak...you can add onions....steam your onions til tender, and you can use some of this water that you steamed with and add to the gravy mix...adds flavor for the beef. You can also use this with fried pork...make the gravy then add your pork (down here we call them pork chops). All the ideas that have been listed sound really good....I will try some of them as well.

Hi, why not try, Plain Fromage Fria, adding some very finely chopped chilli, garlic, with a dash of tomato ketchup, it's delicious
another one is: Mix together Mayonnaise, Tarragon, Chives, & a hint of Tabasco Sauce

cook some garlic a white onion till transparant and mushrooms cooked to your liking then add sum cream a bit of white wine put ythe chicken back in and let the sauce thicken this is really tasty also dont 4get 2 season enjoy

Tarragon goes well with chicken. deglaze the pan after you have cooked the chicken then add some sundried tomatoes, lemon juice, fresh tarragon and some yoghurt.Really tasty!
If you marinade the chicken in Tarragon and lemon juice before you cook it the taste will be even better.

Buy some sweet chilli dip or mix tomato sauce, mayo and chilli powder, for a spicy taco sauce, either would work well.

chop some fresh ginger and garlic really small, add some chilli flakes or fresh chilli and soy sauce to taste, for an extra flavour fry in sesame oil

It's simple and tasty.
4 eggs
1 bottle of Louisiana Hot Sauce
mix together, soak chicken in mixture, then batter it in flour, throw it in your hot grease and fry!
Delicious on southern fried chicken -or- chicken strips!
