i would say to cook talipia( thai fish) this can be found at most grocery stores in the meat / fish department.. Or for single use in the freezer section..
what you will need:
Talipia fillets
Balsamic Vinegarette
Pam cooking spray
Lemon zest and juice
pepper (to taste)
Heat your oven to 350- 400 degrees
Prepare the fish in the balsamic V., Lemon zest, and pepper
Spray a pan with pam cooking spray
Let cook for about 10 to 15 minutes at the most
Take out and serve
Salad:
mixed greens
favortie salad dressing
croutons
and cheese ( if desired)
Mix it up and serve chilled...
Now for desert this is my favorite

CLAM CHOWDER
Here is my personal recipe for Clam Chowder, perfected on clams all over the world, and of course, without tomatoes. It is a simple recipe, which highlights the fresh ocean flavor of good, fresh clams. This recipe is a good meal for two, or a soup course for four. This goes well with a good dry sherry, either to drink with, or a bit added just at the end of the cooking.
To do a clam chowder, first shuck your clams, reserving the juices. In a heavy pot, fry:
2 slices of bacon, cut in squares.
When bacon is crisp, remove and drain, reserve. Pour out most of the grease, and add:
1/2 medium onion, chopped
Saute around until onion just starts to color, add:
2 small potatoes, peeled and cut into 1/2 inch cubes.
Sprig of thyme
Small bay leaf
Dash of white pepper
One dry hot red pepper, optional
Cup of water
Bring to a simmer, and simmer until the potatoes are tender. Add:
1 can condensed milk
Bring back up to a simmer and add:
The clams and their juice
Simmer for a minute or so until the clams are just barely cooked, add:
Tbl. butter
Tbl. dry Sherry, optional
Dash Tabasco sauce if you did not use the hot pepper
Serve in bowls. Garnish with a sprinkle of chopped parsely and chives. Lemon slices and oyster crackers on the side.

How about chicken alfredo? Since it's for lunch, you could do smaller portions than you'd do for dinner. Grill boneless skinless chicken breast on the stove over medium heat in a little butter. Make tri-color bowtie pasta as directed and then pour on some alfredo sauce, reserving about a tablespoon for each chicken breast and heat until sauce is warmed. For presentation, put pasta in center of plate and place chicken on top. The pasta will spread to fill the plate. Drizzle a little of the reserved sauce on top of the chicken. Serve with salad and italian bread. For the salad, don't toss and keep tomato on top to add color. Leave the bread as a loaf and put on a nice plate or in a basket with a bread knife for everyone to cut themselves. You could either put out butter or give everyone a little dish of pesto to dip the bread in. Good luck!

Lunch should be a fairly light meal. I recommend you serve:
Croissant Filled Smoked Chicken Salad Sandwiches
Makes 4 smoked chicken salad sandwiches
1 chicken breast or leg quarter, boneless, skinless
Salt & Pepper
a few drops Liquid Smoke
1 Tablespoon butter
2 tablespoons finely chopped celery
4 tablespoon thinly sliced green onion
4 tablespoons Best Foods mayonnaise
Zest from one lemon
2 teaspoons fresh lemon juice
Salt to taste
1/8 teaspoon freshly ground black pepper
2 tablespoons almonds, chopped and toasted
4 croissant sandwich buns
mayonnaise for croissant sandwich buns
curly leaf lettuce or arugula
Season chicken with salt, pepper and Liquid Smoke. In a skillet sauté chicken in butter until juices are clear, cool and dice finely.
In a small bowl combine chicken, celery, onion, mayonnaise, lemon zest, lemon juice, salt, pepper and almonds.
Cut croissant sandwich buns in half horizontally, spread mayonnaise on each half. Divide the smoked chicken salad sandwich mixture between each sandwich, add leaf lettuce or arugula and serve.

Cool Cucumber Salad
Serves: 4
INGREDIENTS
1 large cucumber, peeled and thinly sliced
1/2 red onion, thinly sliced
3 tablespoons olive oil
2 tablespoons cider vinegar
1 teaspoon sugar
1/2 teaspoon seasoned salt
pepper, to taste
DIRECTIONS
1. In a medium bowl, combine cucumber slices and onion slices; set aside.
2. In a small bowl combine remaining ingredients.
3. Add dressing to cucumber and onion, toss well. Cover and refrigerate for up to 2 hours.
If you want an incredibly cute garnish, try this one:
Hummingbird Chili Pepper Garnish (It's Beautiful)
1 Serrano Chili Pepper
2 Celery leaves
2 strawberries with hulls
When purchasing the chili pepper for the hummingbird chili pepper garnish, chose a pepper with a stem slightly off center so that it resembles a hummingbird beak. Cut two small lengthwise slits on top of the chili pepper about 3/4" from the stem for the wings. Insert two celery leaves to resemble hummingbird wings.
Using one strawberry make a strawberry flower garnish. With the remaining strawberry cut the top straight across including some flesh. Place the cut strawberry top stem side down on a plate, stand the chili pepper on the upside down strawberry top and stick the beak of the chili pepper into the strawberry flower.
Wine recommendation: Chardonnay

How about Lasagna ? It is easy,delicious and you can serve it with a nice green salad some garlic bread and a glass of wine and have something easy that will impress your friends.
Or a nice piece of baked fish,you can serve it with the same things as the lasagna.
