do bombay potatos! yum spicem up with more chilli

6 medium sized potatos
1 tbsp ground turmeric
4 tbsp vegetable oil
2 dried red chillies
6-8 curry leaves
2 onions diced
fresh coriander
1 tsb cumin
1 tsb mustard seeds
1 tsb fennel

chop em cooked and stirfry with the spices.

Roasted potatoes
Peel smallish potatoes - or do not, if they have thin skins. Cut them into smaller pieces. Usually two or three per potato. Preheat the oven to 250°C . Boil the potatoes in salted water until they are almost soft - ten minutes or so. Drain, and shake the potatoes in the pan until they are a little mashed up around the edges. Remove to a large oven tray, and add liberal amounts of olive oil and sea salt. And, of course you may season them afterwards. Garlic, rosemary, thyme.....

Roast in the oven for half an hour or more, turning occasionally until they're golden brown all over. They'll be crunchy and salty on the outside, and deliciously fluffy on the inside.

Make Roasted Red Potatoes with Garlic and Rosemary

1 1/2 pounds small new red potatoes (about 15) cut in half
1/4 cup extra-virgin olive oil
4 to 6 cloves garlic minced/pressed through garlic press
1 tablespoon fresh or 1 teaspoon dried rosemary

Preheat the oven to 350 degrees F.
In a large bowl mix the oil, garlic, and rosemary; add the potatoes and toss well. Transfer the potatoes to a shallow baking pan and roast until potatoes are tender when tested with the tip of a knife. Serve hot. These can also be chilled. Serve with fried chicken or ham.

boil some baby potatoes til they're almost done, then half squuish them with a potato masher (so they are still holding together at the bottom), and put them on a baking tray. Melt some butter with a few cloves of garlic crushed into it and pour it over the spuds, add salt and pepper and bake in the oven for about 45mins or until they are crispy underneath. If you want them spicier just add more garlic, it's a differerent kind of heat but it's lovely. Thes are genuinely the nicest spuds i've ever had.

There are many variations but what i would do is get new potatoes, and boil them between par boil and cooked, then run them under a cold tap until cool, then i would get the potatoes and gently crush them and place them into a roasting tray, then get sprigs of rosemary and lemon thyme and corriander and chuck them into the pots, slice a whole red onion into thin julienne strips whack them into the tray along with whole cloves of garlic with the skins on(when these are cooked they turn into a sweet little flavour without the punch of the garlic and are simply delicious mmmm) then sprinkle coarse sea salt liberally and cracked black pepper and then smother the lot in Exta virgin olive oil, dont be afraid and get your hands in there and just mix everything together, give the whole tray a shake so all the ingrdients are level and spaced well then whack into the oven until the tatties are golden brown! The aroma of it all cooking is amazing and your whole house will smell of a rustic italian kitchen! The ingredients are well cheap, the whole lot will set u back about 2.50 and will feed about 6> Their well tasty, give em a try!

Crispy Chicken is lovely with Garlic Potatoes, I'm not a fan of Garlic but depending on how much you use its lovely.

Have everything cooking to make this.
You will need:

Garlic Butter
Onion Salt
Casserole Dish
Hot water
Potatoes
Tin-Foil

For 3 people I would use 2 tablespoons of garlic butter. 2 pinches of onion salt depending on wheather you like onions or not (bought in any store) mixed with a half a pint of hot water, bring to the boil and keep stirring. You can boil your potatoes and drain all excess water and when the garlic is boiled pour over potatoes and simmer for 2-3 mins.
If you would like something different then you could boil potatoes and chop them in squares, have a casserole dish covered with oil/butter/marg/low fat oil, whichever you like-- make the garlic up as above and pour all the contents into the dish with your cooked potatoes, cook at 190C' for about 30 mins in the oven--- and walla...
You could also try cooking all the above and placing all the contents into tinfoil for that extra garlic taste and its much tastier

Garlic Red Potatoes

Simple, savory, and very flavorful variation on new red potatoes. Excellent side dish!

INGREDIENTS
2 pounds red potatoes, quartered
1/4 cup butter, melted
2 teaspoons minced garlic
1 teaspoon salt
1 lemon, juiced
1 tablespoon grated Parmesan cheese

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place potatoes in an 8x8 inch baking dish.
In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes, or until golden brown.

I'll tell you an Indian recipe which should go well with the chicken,boil potatoes in salt water till almost tender,peel & cut into large bits while still hot.Heat a little oil in a pan,when hot add a pinch of whole mustard,let them splutter,add the potato bits,fry turning occasionally,when the surface starts browning,add some spice powders like chiilie,cumin,garam masala powder,when brown enough & well coated with spices add chopped cilantro,other herbs will do, a squeeze of lemon juice & you have 'Masala Aloo'

Get some flour mix with water for a paste put some herbs in, then slice your potatoes into 10mm slices dip these into your batter put into your pan a fry them, you may even put them into the same pan as your chickens, as a side put some potatoes mashed with mustard , mild or for a totally different taste to potatoes mix some mint sauce with the mash, mouth watering already.

Hi, slice potatoes like crisps but slightly thicker, bring to boil turn off & drain, Add Chilli, Salt & Black Pepper, place on baking tray cook until crispy, turning occasionally.

Another idea is boil potatoes until cooked, drain, fry off some Chopped Spring Onions,Yellow peppers add to potatoes, place in oven proof dish, roast in oven for about 30 mins till crisp,

You could buy a small can of new potatoes and drain the water off, spice them up by rolling in a mixture of curry powder, coriander and mint. Spray with cooking oil and brown them in the oven, season with pepper and salt. This is quite different and would compliment the crispy chicken breast without overpowering it.
