They were probably just overcooked or cooked at too high of a temperature. But flour CAN go bad. But the smaller bags, keep it in an air tight container, and know it won't last forever! :)

Old flour is more likely to develop bugs than anything. Though I'm sure it can have a tainted taste as well were it not stored properly. Sounds more like the culprit was the preparation of the food, not the ingredient, in this case.

I bake about every 6 months and keep my flour in an airtight container to keep out the bugs and moisture. If you had it in the bag it could have gotten moisture in it and if it was too crispy I would say it was overcooked not the flours fault.

Flour can absorb off flavors and odors if it is stored around things like onions etc. but it wil not affect the way it cooks. The only exeption to this is self rising, if it gets too damp it will not rise as well later but as breading (which I always use plain flour for) it wouldn't be affected.

If you had the flour for ages I could see it going bad. I always keep my flour & corn meal in the ice box to keep it fresh and to keep the weevils out of it.
