As a student my meal times fluctuate, and I have just finished my "tea" even though it's jsut gone 2PM. This was so easy, took my under an hour from start to finish, the cooking is quite quick though so have things prepared and chopped beforehand.
Breadcrumb Tuna steak with cheese and mushroom mash and Sweetcorn
Breadcrumbs
Butter
Basil
Garlic (fresh or instant)
Tuna Steaks
Potatoes
Milk
Flour
Cheese (grated)
Mushrooms (any small type except the plain white ones with no flavour)
Boil some large potatoes that have been peeled in some lightly salted water.
Melt some butter in a pan and pour into a jug with breadcrumbs. mix well, adding salt, pepper, some basil and garlic (fresh or otherwise, i used garlic salt, cutting back on the regular salt) Take a tuna steak and lay down in the pan you melted the butter in to lightly coat it, or use a brush. Cover one side with the breadcrumbs (next time I might try completely covering) and place on baking foil. Heat on about 170 C for 20 minutes.
(This part is how to make lasagne white sauce with cheese, if you already know how, skip it)
Melt some more butter in your pan (i must have used half a stick in total for the breadcrumbs, mash and sauce) Take off the heat once melted and add some flour until it makes a smooth paste. This is the one tricky bit. On a very low heat add milk bit by bit. DO NOT STOP STIRRING. The paste will turn from a yellow mixture to a smooth off white sauce that should be bubbling lightly by the time you finish. Add some more milk until the sauce is a bit more runnier than you would like because it will thicken up. Add grated cheese a bit at a time and stir until it fully mixes in before adding some more. Use as much as you would like (i only had a bit of cheese left, about 3 handfuls, for my taste could have done with some more) Finally add some mushrooms (cut into quarters for the small ones, eighths for the large ones, i used some mild ones that were on offer at the supermarket) and stir in. Keep stirring as often as you can until it starts to thicken up again. You now have a cheese and mushroom sauce.
When your potatoes are boiled and soft empty the water and start to mash with a little butter. When it is fully mashed add your cheese and mushroom sauce, stirring in well.
I had some frozen sweetcorn which just took 3 minutes in the microwave. If you are using fresh they need to be boiled as directed in the packet.
Take out the tuna, it should be hot in the middle and the breadcrumbs golden. Don't waste the buttery sauce on the foil it can be poured over the tuna when served. For a little added effect it can put under the grill for a few minutes to give the breadcrumbs some crispy texture but i didn't bother.
Serve the tuna alongside the cheese and mushroom mash an a pile of sweetcorn.
et Voila!

Throw a mix of veggies e.g. onion, celery, cherry toms, sweet peppers, baby carrots (pre boiled for 5 minutes) mushrooms and several whole unpeeled cloves of garlic into a roasting tin with a couple of chicken portions. Sprinkle over some rosemary, thyme, salt, pepper, chopped ginger and two teaspoons of mild curry powder. Pour over a good glass of white wine, 3 good glugs of olive oil and a decent squirt of runny honey. Bung into a medium oven for about 40 mins, ( check chicken is cooked through) put veggies and chicken onto plates and add to sauce in pan 3 or 4 knobs of butter, stir till dissolved, pour sauce over Chicken and veggies and serve with hot crusty bread for mopping and a cold glass of Chardonnay. Bon Appetit!
