Green mangoes are perfect for salads. The tangy taste blends well with tomatoes, finely diced onion and slathered with a sweet vinaigrette. If you finely grate a green mango, put iced water, add sugar according to you taste and ice, you've got a green mango juice. Chutneys blends well with green mango. In Philippines and Thailand, they use sauteed shrimp paste that goes with it. You'll salivate if you see a person eating a green mango with a sauteed shrimp paste dip.

I've tried sour mango dipped with salt or anchovies but I don't really dig it. I'd rather have sweet mangoes. (- -,)
