When you get tired of lemon pancakes – does that ever happen? – try one of these variations.

Apple Pancakes A quick and easy dessert recipe.
Banana Pancake Place thin banana slices on pancake, drizzle over a little maple syrup and roll up.
Blueberry Pancake Stir whole fresh blueberries into your batter, and cook with the pancake. Or stew blueberries lightly for a few minutes with a little water and a sprinkling of sugar if needed, then spoon into pancakes as a filling.
Chocolate Pancake A good way to make a little chocolate go a long way. Grate or chop some good quality chocolate, with at least 50% cocoa solids content, and sprinkle into centre of pancake before rolling.
Chocolate Chip Pancake Stir a few chocolate chips into the batter before cooking the pancakes, or use them as a filling.
Pumpkin Pancakes Delicious little pancakes which are perfect for breakfast.

A nice savoury option is to make a cheese sauce and put some tuna fish in it, roll the pancake round it and sprinkle some more grated cheese on top.

Sweet - just lemon and sugar!
