How do you cook oysters in the shell.
Do you wash them first?
Do you bake them until brown?
Help??

DO NOT use oysters with open shells.

1. Rinse the oysters in a colander and drain well.

2. Put the live oysters in the shell in a large Saute pan on medium-high heat and leave them till their shells open a little - !!discard any oysters that failed to open!!

3. Take them off, open them on a plate, and season with salt and pepper or whatever you like

For oven roasting 450F for 10 minutes

I normally just boil water first and blanch the oysters with them. When they open up just a little bit on the side, I scoop them up and put them in vinegar with some onions, ginger, chilli peppers and a teeny weeny bit of salt.

Or if I want them baked, I still blanch them to make them open and I open them up and discard the top shell. Then, I melt some butter and add it to the opened oysters. I add some fried garlic and grated quickmelt or cottage cheese in and bake them till tje cheese is just melted.

If you must cook oysters ( I prefer them live ) then grill ( broil ) them very briefly at a high heat with the topping of your choice. Just open them without washing and be careful to try and save the juices.

If you do any more than that then they will become very tough and all the subtle flavour will be lost.

Oysters in the shell should be placed on a hot BBQ, you can see when they are done...the juice inside the oyster steams and then it will open the shell. After that I scope them out and dip them in some melted butter and lemon juice....or in a homemade horseradish and ketchup dip.
