To make my potato mash different, I would add a whole head of mashed ROASTED GARLIC and a dash of NUTMEG. Of course the mandatory butter and milk are always there. Believe me, once you add this to your potatoes, there's no going back to plain potatoes...

Steamed vegetables smothered in brown onion sauce.
Mashed potato variances:
Add a finely chopped onion into the mash, or
Cover mash with cooked peeled prawns, or
Cover mash with sautered mushrooms, or
To make a very colourful combination mix corn, peas and lightly boiled diced carrots.
Add a good sprinkling of pepper to all of the above.

steamed veggies accompanies anything well enough.
also, a cool add in to kick up you're mashed taters is get half a big yam or a small yam, peel it and boil it then mash it in with your regular potatoes and it adds a bit of sweetness that's super tasty, ditto with a very light dash of cinnamon & pepper.

A tin of peas and a tin of tuna then make fish cakes they are yummy . Shape the cake then put in plastic bag of plain flour then into pan and brown a bit

kimchi always works for me.
tried baking mashed potato+kimchi fried rice before on a whim.
it was delicious.

1. Sauteed Broccoli Rabe
2 pounds broccoli rabe (2 bunches), hollow stems discarded
2 tablespoons unsalted butter
2 garlic cloves, chopped
Cook broccoli rabe in a large pot of boiling salted water until just tender, about 4 minutes, and drain in a colander.
Melt butter in same pot over moderate heat, then cook garlic, stirring, until fragrant, about 30 seconds. Add broccoli rabe, tossing gently in butter to coat, and season with salt and pepper.
2. Cheddar Quick Bread
2 cups flour
1 Tbsp. sugar
1-1/2 tsp. Baking Powder
1/2 tsp. salt
1/4 cup (1/2 stick) cold butter or margarine
2 cups shredded Sharp Cheddar Cheese
1 cup milk
1 egg, beaten
PREHEAT oven to 400°F. Mix dry ingredients; cut in butter until mixture resembles coarse crumbs. Stir in cheese. Add combined milk and egg; stir just until moistened.
SPOON into greased and floured 9x5-inch loaf pan.
BAKE 45 minutes. Cool in pan 5 minutes; remove from pan. Cool completely on wire rack. Cut into 16 slices to serve.
3. Baked Tomatoes
tomatoes, halved crosswise
1/4 cup Balsamic Vinaigrette Dressing
1/4 cup 100% Grated Parmesan Cheese
PREHEAT grill to medium heat. Place tomatoes, cut-sides up, in disposable foil pan. Drizzle with dressing; sprinkle with cheese.
PLACE pan on grill; close lid.
GRILL 15 min. or until tomatoes are soft and cheese begins to turn golden.
3. Zuchini & Apple Slaw
2 Tbsp. KRAFT Mayo Real Mayonnaise
2 Tbsp. KRAFT Ranch Dressing
1-3/4 cups coarsely shredded cabbage
1 cup thinly sliced red apples (1 medium)
1 cup matchlike zucchini sticks
1/4 cup shredded carrots
1/4 cup dried cranberries
MIX mayo and dressing in large bowl.
ADD remaining ingredients; toss to coat.
SERVE immediately. Or, cover and refrigerate up to 2 hours before serving.

you could make a mushroom loaf. its basically meat loaf but you make it with a bunch of wild mushroom. its our best selling vegetarian entree. you have to bind it with ground corn flakes
