BEST EVER BARBECUE SAUCE

This barbecue sauce has a delicious flavour that comes from gentle simmering after the last ingredient has been added. It is perfect for grilling on the barbecue, or for oven barbecuing,, Great on chicken, ribs, chops, burgers and steaks,.. and also a perfect dipping sauce, especially for beef fondue.

2 tbsp butter
2 medium onions, finely chopped
1 clove garlic, minced
1 tsp salt
1/2 tsp pepper
1 tbsp chili powder
1/4 tsp cayenne (or more..)
1 tbsp parsley flakes
1 tbsp brown sugar
2 tbsp worcestershire sauce
3 cups ketchup
3/4 cup water
2 tbsp lemon juice
2 slices of lemon

Melt butter in a large pot over medium heat. Add chopped onions and cook gently until they are translucent. Add the garlic and all of the other ingredients, one at a time in the order given, EXCEPT FOR THE LEMON SLICES, stirring well after each addition. Gently bring to a boil, and then reduce heat, add the lemon slices, and simmer, stirring occasionally for a half hour. Allow the sauce to cool completely. At this point, if you prefer a smoothe sauce, you can process it in the blender, a small amount at a time, or you can do it with a hand held mixer. This is a great hostess gift when invited to a backyard party. It keeps well when refrigerated.. up to three months, but it will never last that long once you taste it.

Makes about a quart of barbecue sauce

The one you make in your own dang saucepan, but if I gotta pick a commercial brand...I have 2.

Budweiser's Beechwood Smoked sauce. And anything by Dinosaur BBQ in Syracuse, Ny. Especially the wango tango.
