"Super easy to make, and these won't last long. Try substituting almond or lemon extract for the vanilla. Or top them with flaked coconut or fresh fruit before baking!"

Original recipe yield: 18 servings.

INGREDIENTS:
3 eggs
2 cups white sugar
3 tablespoons butter
3/4 cup all-purpose flour
2 cups milk
1/2 teaspoon vanilla extract

DIRECTIONS:
Preheat oven to 325 degrees F (165 degrees C).
In a blender, combine eggs, sugar and butter. Blend until smooth. Pour in flour and milk, a little at a time, blending until smooth again. Stir in vanilla.
Pour into muffin tins, filling 3/4 full. Bake in preheated oven 45 minutes, until golden brown. Serve hot or cold.

When my nephews were little, I would make cupcakes in those Comet brand Ice Cream Cones, those cones have straight up sides.
Fill the about 2/3 full with cake batter and cook like a regular cup cake. Works great with small kids, no paper for them to swallow or have to dispose of.

Chocolate Cupcake Black Forest Dessert

This is one of the best and easiest black forest desserts that is sure to be a huge hit at your potlucks and church dinners. It's so rich and lovely, you might want to leave it at home for after the shindig.

9-12 servings

2½ hours prep

INGREDIENTS

16 chocolate sandwich style cookies
2 tablespoons melted butter
1 (4 ounce) package instant chocolate pudding mix
2 cups milk
1 (14 ounce) package hostess cupcakes (8 Cupcakes)
1 (21 ounce) can cherry pie filling
1 (8 ounce) carton frozen non-dairy topping, thawed

DIRECTIONS

Place cookies in work bowl of food processor; process until fine crumbs.
Add melted butter and pulse to combine.
Press across bottom of 9 x 13-inch dish to make a crust.
Whisk together pudding and milk for 2 minutes.
Spoon pudding over crust.
Cut each Hostess Cupcake into fourths and arrange, cream-side up, on top of pudding.
Spoon cherry pie filling over Cupcakes.
Spoon whipped topping over cherries.
Refrigerate several hours or until set.

Mix up your cake mix. Pour it in to cupcakes pans (putting the liners in first helps).. If you do not cupcake pans buy the liners that have foil also on them. they will stand up on a cookie sheet. You can also fill ice craem cones about 2/3 the way and set them side by side in a baking pan close eniugh so they wont turn over.
