1.WHITE WONDER ICING

Mix in double boiler: 1/2 c. sugar 2 tbsp. white corn syrup Pinch of cream of tartar
Place over boiling water for about 6 minutes, stirring with finger until it's too hot for you. Remove from heat. Beat with mixer until icing will hold shape.

2. SPECIAL WHITE ICING

1 lg. tart apple, peeled and grated
1 egg white
1 c. sugar
3 drops lemon extract

Combine all ingredients and beat with electric mixer until stiff enough to stand in peaks. Heap on cake, top and sides.

3.WHITE DECORATING ICING

1 (2 lb.) pkg. powdered sugar
1 c. Crisco shortening
3/4 c. milk
Dash salt
1/4 c. flour
1 tbsp. white vanilla, or to taste
2 tsp. almond flavoring, or to taste

Use a large mixer bowl. Beat half the sugar, the Crisco, half the milk, salt, flour and flavorings until mixed. Gradually add the rest of the sugar. Add rest of the milk as needed. Beat well for 5 minutes or so, scraping the bowl often.
If coloring is desired, divide into batches. Mix in the color. If a stiffer icing is needed to make roses, etc., beat in more powdered sugar.

Put some confectionery sugar in a bowl. It depends on how much icing you need. Add some butter and vanilla and a dash of salt. Mix until smooth.

If you need enough for a whole cake 8" to 9"; I'd use at least one pound of confectioners' sugar, 6 level tablespoons butter, appx. 1/4 cup of light cream, vanilla ( 1 or 2 teaspoons)
Mix by hand or in a mixer until smooth. Add the milk gradually until you get it the consistency you want. Thick or thinner.
