Its called a meat slicer.

They probably just use a meat slicer like they use in a deli to cut turkey or ham or whatever else. Those things can be adjusted to specific thicknesses.

They use a deli slicer just like when you order lunch meat at the grocery store.

The meat is first frozen. Then you can slice it that thin on a slicer. You can't get that thin when it's warm - it'll pull or shred.
