Put the potatoes in water in the refrigerator. Don't forget the onions. I like a pot roast just cooking in a crock pot if you have one you could go ahead and start it cooking. Celery is good added as well as carrots I just might make one myself tomorrow evening. When it is just about done i think i will add some frozen peas. You got me wanting to fix some pot roast. I used to fix my potatoes ahead of time so at dinner time i got it fixed faster.

It will be a light tan. And you don't need to prevent it. It's the best roast dinner with tatos and carrots in it. You let it cook on 300 for at least 3 hours or so. n

Just soak in water preferably in the fridge they will be fine , little salt helps but I don't use salt. MMMM....... pot roast.

like others said store them in water in the fridge, although really it only takes moments to cut a potato up so it makes best sense to do it when you throw it all together.

Yes, unless you soak them in ice cold water in the fridge until ready to use. This is what we used to do when I worked in a restaurant years ago.

i always add a teaspoon of Salt to the water and put the lid on - stops them from going brown.

just wrap them in foil and pop them in the oven, that will keep them from browning...they will only get soft and roasted.
