Ease off the gas smoothly, but quickly. Keep the front wheels pointed in the direction you want to go, and be ready to steer quickly as the car starts to lurch and sway suddenly when it exits the puddle and finds traction again.

not a whole lot you can do other than let off the gas, don't hit your brakes and keep the steering wheel straight.
