Layered Taco Casserole

Ingredients
1 pound ground beef or pork
1 cup chopped onion or sliced green onion
3/4 cup water
12 6-inch corn tortillas
1 pkg. (1.25 oz.) McCormick original taco seasoning
4 cups shredded lettuce
1 to 3 teaspoon garlic powder
2 medium tomatoes chopped
1 container (16 oz) cottage cheese
1 sour cream (optional)
2 cups shredded sharp cheddar cheese


Directions
Preheat oven to 350 degrees.

Lightly coat a 13 x 9 x 2 baking pan with nonstick cooking spray; set aside.

In large skilled cook meat until brown. Drain fat. Stir in water, taco seasoning and garlic powder. Bring to a boil; reduce heat. Simmer,
uncovered, about 5 minutes or to desired consistency; set aside.

In mixing bowl combine cottage cheese, cheddar cheese and onion.

Place 6 tortillas in prepared pan. Top with half of the meat and dollop with half of the cheese mixture. Repeat layers. Bake, uncovered for 40 to 45 minutes or until heated through.

Top with lettuce and tomatoes. Serve with sour cream, if desired.

Tatortot casserole
1 1/2 lb hamburger
7 or 8 slices of cheese
1 can cream of mushroom or cream of chicken soup
About a half bag of tator tots
3/4 cup of chopped onion (optional)

Brown hamburger meat with onion and drain grease. Pour the hamburger into a casserole dish. Spread the cream of mushroom soup over the meat. Put a layer of cheese slices on it. And then layer with the tator tots. Preheat oven to 425. Cook for about 20 to 25 minutes till tator tots are hot and cheese is melted.

This is a favorite around my house and it is so simple to make. I don't usually add the onion though because my hubby doesn't like them. You need the cream of mushroom or cream of chicken soup so that it turns out juicy. The leftovers also warm up really good in microwave. As far as the oven temperature I usually go by the instructions on the tator tot bag.

Burrito Bake:
Spray an 8 x 8 baking dish, then mix 1 cup Bisquick & 1/4 cup water in a bowl with 1 can of refried beans. Spread that in the sprayed baking dish. Top with 1 lb. ground beef, browned. Pour 1 cup salsa on top, then top with 1 1/2 cups shredded cheddar. Bake at 400 for 25 minutes. You can "double" this and use a 9 x 13 pan, but don't double the Bisquick/bean mix. Leave it the same or 1 1/2 it, or it gets too puffy. YUMMMY Good luck!!

Cheesy Rice-A-Roni Casserole

1 Box Beef Rice-A-Roni (prepared per box instructions)
1 Pound scrambled ground beef
1 Pound Velveeta Cheese

After preparing Rice-A-Roni per instructions, mix in cooked ground been and Velveeta. Stir until Velveeta has melted. Pour into 9x13 baking dish and bake at 350 until bubbly.

Believe it or not, this tastes pretty darn good! The leftovers do as well.


My ex-husband used to make this one:

Lean Hamburger Patties (however many you'd like that can fit in a skillet)
1 Can Cream of Mushroom Soup
1 Can Milk
Salt & Pepper to taste

Fry hamburger patties in a skillet. While they are cooking, mix can of milk with soup. Once patties are done, you may or may not remove them from the skillet (your choice). Pour soup mixture over patties. (The leaner your hamburger, the less grease will be in the skillet. If there is too much grease, you may want to spoon out some of it. You do want to leave some grease IN the skillet.) Stir the soup. You will notice it becoming a little darker due to the drippings in the pan. Spoon over patties.

Serve with rice, mashed potatoes, vegetables, whatever you prefer. This one is easy and yummy, too!

Zach's Easy-Cheesy Macaroni & Hamburger Meat:

15 min 5 min prep
4-6 servings

1 package Kraft macaroni and cheese
1 lb ground beef
1/2-1 onion, chopped (omit or adjust to your liking)

1. Prepare the Kraft Macaroni& Cheese as directed.
2. I also start browning the ground beef, adding the onions.
3. Drain fat.
4. Mix browned, ground beef& onion with the macaroni& cheese and serve!
5. This recipe is so easy and kids should really love it!

HAMBURGER CASSEROLE

This recipe serves two but easily can be doubled or tripled to feed a hungry crew.

* 1/2 small onion
* 1 tablespoon olive oil
* 1/4 pound ground beef
* 1 small tomato, peeled and cut up
* 1/4 green bell pepper, chopped
* 1/2 stalk celery, chopped
* Salt and pepper
* 1/2 teaspoon sweet basil
* 1/2 small zucchini, thinly sliced

Chop onion. Cook in skillet with 1 tablespoon olive oil. Add hamburger to onion and brown to taste. Add tomato. Add pepper and celery. Season to taste with salt and pepper and 1/2 teaspoon sweet basil. Fry until almost cooked. Add zucchini, sliced thin. Barely heat through. Serve with cooked rice.

Makes 2 medium servings.

No name Campbell's soup Casserole

Serving: 4

Total Time: 50 minutes

You'll need:

1 1/2 lbs ground beef
1 4 oz can mushrooms
1 10.75 oz can cream of chicken soup
2 14 oz cans green beans, drained
4 cup instant mashed potatos, prepared
shredded Cheddar cheese



Directions:

1. Brown ground beef and mushrooms in skillet.
2. Drain fat.
3. Stir in cream of chicken soup.
4. Spray 8x8 glass dish with non-stick cooking spray.
5. Pour hamburger mixture into dish.
6. Top with green beans; sprinkle with salt and pepper.
7. Top with mashed potatoes.
8. Bake in 350 degree oven for 20 minutes.
9. Pull out and top with shredded cheese, and return to oven until cheese is melted.

SHEPHERDS PIE (POOR MANS PIE)

1 lb. ground beef
1 can peas
1 can sweet corn
1 medium onion, diced
1/3 c. sugar
8 medium potatoes
2 c. shredded sharp cheddar cheese

Boil potatoes, mash and season to taste with milk and butter.
Brown ground beef and onion with salt and pepper. When cooked, add peas, corn, sugar. Let simmer until heated through.

In 13x9 pan place meat and vegetable mixture in bottom of pan. Cover with mashed potatoes and sprinkle cheese on top.

Place in oven on BROIL until cheese is bubbly or light brown.

I make a dish I came up with by accident. brown a pound of burger and drain off the fat, place browned meat in a skillet and add a can of cream of mushroom soup and 1/2 a can of milk ,a small can of mushrooms and a 1/2 cup of frozen peas. heat until this starts to bubble. my family loves it !! : )

Cheeseburger Potato Chowder

1 lb lean ground beef
1/2 cup chopped onions
4 cups milk
2 cups grated American cheese (or cheddar if you prefer)
1 cup O'Brien potatoes (the cubed kind, not shredded)
1 teaspoon black pepper

In a skillet, brown beef until almost done.
Stir in the onions and cook till onions are soft and meat is no longer pink. Drain off any remaining fat.
In a soup pan over medium heat, combine milk & cheese, cooking until just beginning to boil, stirring often.
Add beef, onion and potatoes to cheese sauce.
Lower heat and simmer for 20 minutes or until potatoes are tender.
Season with pepper.


Hamburger Goulash

1 1/2 lbs lean ground beef
2 tablespoons flour
1 medium maui onion, sliced
2 garlic cloves, minced
1-2 cup mushrooms, sliced
1/2 carrot, sliced
1/2 cup celery, sliced
1/2 cup peas
2 (10 3/4 ounce) cans cream of mushroom soup (or celery soup)
1-2 cup low sodium beef broth (or vegetable broth)
1 pinch sea salt (optional)
1 pinch pepper (optional)

Using medium pot, brown the ground beef until almost done.
Add vegetables and stir fry until cooked but still crispy [add mushrooms last].
Mix in soup and as much broth as needed to thin to your liking.
Simmer for about 15 minutes.
Please note that the soup and broth are salty…taste before adding the sea salt.


Cheeseburger Bake

1 lb lean ground beef
3/4 cup chopped onions
1 (11 ounce) can condensed cheddar cheese soup
1 cup frozen mixed vegetables
1/4 cup milk
2 cups Bisquick baking mix
3/4 cup water
1 cup shredded cheddar cheese

Heat oven to 400ºF. Generously grease rectangular baking dish, 13x9x2 inches.
Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in soup, vegetables and milk.
Stir Bisquick mix and water in baking dish until moistened; spread evenly. Spread beef mixture over batter. Sprinkle with cheese.
Bake 30 minutes.


Easy No Bake Frito Pie

1 lb ground beef (or ground turkey)
1 (16 ounce) can kidney beans (drained)
1 (14 ounce) can diced tomatoes with green chilies
1 teaspoon salt
1 teaspoon pepper
4 cups Frito corn chips
1 cup shredded cheese

Brown the beef and then drain.
Add the kidney beans, tomatoes, salt, and pepper
Let it simmer for five minuets
Put Frito's into individual bowls
Spoon the meat mixture on top of the Frito's.
Add cheese.


Stuffed Pepper Soup

28 ounces diced tomatoes
28 ounces tomato soup
2 lbs ground beef
1/4 cup brown sugar
2 beef bouillon cubes
1 teaspoon pepper
2 teaspoons salt
2 cups cooked spanish rice
2 cups green peppers
2 cups water

Cook ground beef and drain.
Chop green peppers into bite size pieces.
Combine all ingredients into a large pan and simmer for at least 1 hour
