If you mean what alleviates the chilli burn while you're eating the curry the answer is any dairy produce - milk, lassi (yoghurt drink), ice cream. NOT beer or even water. (although, personally, I don't mind the chilli burn and drink beer anyway!!)
If you mean what helps with "ring of fire" a.k.a. "Bangalore bum" the next day the answer is ..... nothing. It will pass, as they say.

The burn is caused by pepper molecules that have become stuck tight into receptor sites in your mouth that are the same size and shape as the pepper molecules.

Dairy products (including milk) will help seal the molecules to your tongue and mouth, prolonging the burn.

Alcoholic beverages will irritate the inflamed tissue making the burn worse.

The answer is: sugar water (or any other sweet drink). The sugar molecules, in solution, are very small and get between the pepper and the receptor sites, thus dislodging the pepper.

The burn comes from a substance called capsicum. Anything fatty, like the milk or egg will coat it and trap the capsicum molecules. Something sweet is best. The easiest thing to grab is sugar, just put a 1/8 tsp of sugar on your tongue.

Saliva is the best. Cold milk the next. Lots of cold water thereafter.
