There is no opposite taste to sweet, but the five basic tastes are sweet (sugar and several other types of chemical), sour (acids), salt (sodium chloride and several other ionic compounds like potassium chloride), bitter (alkalis, alkaloids and a few other compounds like quinine) and umami (monosodium glutamate).
