Does anyone have a recipe for the white mexican (not cheese) dip served in mexican restaurants? I've asked several times while dining out and they seem kinda tight lipped on the recipe.

sour cream?? It's crema, there are different kinds though, they're not like regular american sour cream, one is more liquidy <--[i dont think that's a word lol] I don't know if you're talking about that, but if you are, another is Crema agria can be made with 2 tablespoons of buttermilk and 1 cup of sour cream.

Heat the cream on low in a small saucepan until the chill is off. Pour it into a small jar and whisk in the buttermilk. Cover the jar loosely. Let the mixture stand at room temperature for 12 to 24 hours, until the mixture is thick and tart.

Stir the crema well, cover tightly and refrigerate for up to 10 days.

A second, sweeter crema is sold in most Mexican markets for $1.69 a pound and is used as a garnish for desserts.
