Quick answer - It depends on how they are cooked.
The skin on vegetables may contain nutrients (potatoes) so if you remove the skin you are losing nutrients. Also if you boil you vegetables you loose many of the nutrients into the water.
However with tomatoes (yes i know many consider them fruits, but for arguments sake humour me) then amount of lycopene increases once the tomato is cooked.
A great way to retain the nutrients is to roast or steam the veggies.

Yes. Some of the nutrients end up in the cooking water if boiled or steamed.
The best way to cook veggies so as to maintain as much nutritional content as possible is the microwave. Don't overcook the vegetables. Alternately, a stir fry is good too because the vegetables stay crisp and are not overly cooked. Just heated through. Just watch how much oil you use.

Yes. When you cook veggies, you cook alot of the nutrients. I'm almost positive that grilling cooks the least nutrients out.

the way most people cook veggies, yes! but lightly steamed or sauteed retains most vitamins. Some, like carrots NEED to be cooked a bit to release locked vitamins and minerals. I learned that in my Food Science and Nutrition 120 class at UMASS.

YES=once you cook any vegatables halfway or all the way you've lost all the nitrients. Best way to get all the enzimes from vegatables is to pull them out of the ground, wash them off and eat them.
