Wacky Cake
1 ½ cups flour
1 cup sugar
3 level tbl cocoa
1 tsp baking soda
½ tsp salt
1/3 cup veg. oil
1 tsp vinegar
1 tbl vanilla
1 cup cool water
Mix dry ingredients in bowl. Add oil, vinegar and vanilla and stir lightly. Add water and mix well with a fork.
Pour into a 7 x 11 ( or 8 x 12) ungreased cake pan and bake 25 – 30 minutes @ 350˚. Check with toothpick for doneness

In recipes for baked products which have a gentle, ethereal texture, replace eggs with an aspect that resources carry. Any of the following elements can replace one entire egg in a recipe: 0.5 a small, ripe, mashed banana. This substitution supplies the food a youthful banana style, which will properly be impressive in recipes for brownies, cookies, pancakes, and quick breads. a million/4 cup of any type of tofu blended with the liquid elements in the recipe. gentle or decreased-fat tofu cuts down on the fat and energy in the finished product. a million/4 cup of applesauce, canned pumpkin or squash, or pureed prunes. in case you employ those meals, understand that, reckoning on the recipe, they might upload a contact of style. in case you want to furnish the food a lighter texture, upload an more beneficial a million/2 teaspoon of baking powder, because utilising fruit purees to interchange eggs can make the finished product quite denser than the unique recipe. A heaping tablespoon of soy flour or bean flour blended with a tablespoon of water. this mix works further to vegetarian egg replacer. 2 tablespoons of cornstarch overwhelmed with 2 tablespoons of water. This, too, works very like vegetarian egg replacer. a million tablespoon of finely floor flaxseeds whipped with a million/4 cup of water. The flaxseeds gel and bind with the different elements.

Although I have never tried this, I ran across the information somewhere:
1 banana = 1 egg in cakes.
Hope it helps. Let us know if you try it!
