I've never heard of anyone turning colors eating tomatoes. But yes, people can turn a yellowish orange color if they consume a lot of carrots because of the beta carotene.

The only thing that could happen to you, from eating to much tomatoes, is you may get acid indigestion. Carrots provide fiber, and Beta-caritine, but I'm not sure if they color your skin.
A friend of mine ate so much pumpkin at one sitting, that her skin turned orange the next day. So I'm assuming that this Scrub story line could be true to some effect.

Vitamin A overdose can cause symptoms such as orange skin, blurred vision and nausea. Vitamin A toxicity can cause more severe symptoms such as growth retardation, hair loss and enlarged spleen and liver and even death. Retinol and beta carotene both belong to the Vitamin A family. The body automatically removes excess beta carotene so it is impossible to overdose on this type of Vitamin A. (Source: WD Writers)
However, just eating carrots is unlikely to cause this problem. Scrubs is a comedy. Don't beleive it.

You can eat as many tomatoes as you want too and it will not turn your skin any color. The more tomatoes the better as they have lycopene in them and are great source of antioxidants that will help you.
On the other hand, eating too many carrots can turn your skin orangish from the carotene. Doesn't really hurt you but you will look funky until your body flushes the coloring out.
