I'm not that great of a cook, but he can cook ANYTHING.
What dishes can I make that are simple to prepare but will still "wow" him?

this is a simple but delicious chicken recipe-
take trimmed boneless breasts, dip them in a mix of a few tbls melted marg. , 1-2 tbls dijon mustard and a splash of Worcestershire then dredge them in 1cup of plain bread crumbs mixed with 1/2 cup parmesan.drizzle with any remaining marg. and sprinkle remaining crumbs. bake on a cookie sheet at 350 for about 40 minutes.or til done. don't overbake or they'll get to dry.serve with a ceasar or green salad and rice pilaf (rice a roni). delicious every time.

Make a grilled steak (filet mignon is the best) a baked potato with cheddar cheese (400 degrees for one hour) a simple salad and the best garlic bread ever! (see below). Easy and he'll love it!

Best Garlic Bread Ever!

INGREDIENTS
1/2 cup butter, softened
2 tablespoons mayonnaise
1/4 teaspoon sage
3 cloves garlic, chopped
2 teaspoons dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
1 French baguette, halved lengthwise
2 tablespoons grated Parmesan cheese, or to taste
DIRECTIONS
Preheat oven to broil.
In a medium bowl combine butter, mayonnaise, sage, garlic, oregano, salt and pepper. Spread mixture evenly on bread and sprinkle with Parmesan cheese.
Place bread under broil for 5 minutes, or until lightly toasted.

Pasta with red sauce and sausage always works. Get some fresh parmesan to top it, and a good crusty Italian bread, too.
Make a salad with a green leafy lettuce, not Iceberg, and just go crazy with veggies in it. Buy a good salad dressing. Or use fresh crumbled blue cheese and a little oil and vinegar.
For dessert...ice cream sundaes. They're fun and just yummy.

Mixed Fruit and Spring Greens with White Chocolate-Orange Vinaigrette

Salad:
1 (15-ounce) can Mandarin oranges
5 ounces pre-washed spring greens
2 cups fresh strawberries, quartered
1/2 pint blueberries
Dressing:
1/4 cup Champagne wine vinegar
1/3 cup reserved Mandarin orange juice
1/4 teaspoon salt
2 tablespoons sugar
1/4 cup white chocolate chips
3 tablespoons olive oil


Drain Mandarin oranges and reserve juice. In a large bowl, combine salad greens and fruit. Set aside.
To make the dressing, in a small saucepan over medium-low heat, combine vinegar, 1/3 cup reserved Mandarin juice, salt, and sugar. Gently heat until sugar is dissolved. Remove from heat. Stir in white chocolate until melted. Set aside to cool. Do not refrigerate, as white chocolate will set.
Before serving, slowly whisk in olive oil. Spoon desired amount over salad and toss. Serve remaining dressing on side.



Shrimp Vera Cruz

1-2 teaspoon olive oil
1 medium onion, chopped
2-4 garlic cloves, pressed
1 (14 ounce) can diced tomatoes with green chilies
1 medium jalapeno pepper, seeded and chopped
1 small green bell pepper, cut into thin strips
1 lb medium shrimp, peeled and deveined
1 tablespoon cornstarch
1/4 cup cilantro, coarsely chopped
2 cups hot cooked brown rice
1 lime, cut in wedges

Heat the oil in a large non-stick skillet over medium heat.
Saute the onion and garlic until tender, about 5 minutes; add tomatoes with liquid and the jalapeno pepper; simmer approximately 10 minutes.
Add the shrimp and cook until the shrimp turn pink, approximately 3 to 4 minutes.
In a small dish, combine the cornstarch with 1 tablespoon water and stir to blend; whisk into the skillet and stir until the sauce thickens, about 1 minute then stir in the cilantro.
Divide the rice among 4 bowls, and top with equal portions of the shrimp and vegetable mixture.
Garnish each dish with lime wedges and serve.

Roasted Garlic Bread

What you need:
3 bulbs garlic
2 tablespoons olive oil
1 (1 pound) loaf Italian bread
1/2 cup butter
1 tablespoon chopped fresh parsley (optional)
2 tablespoons grated Parmesan cheese (optional)

What you do:
Preheat the oven to 350 degrees F (175 degrees C). Slice the tops off of the garlic bulbs so that the tip of each clove is exposed. Place the bulbs on a baking sheet, and drizzle with olive oil. Bake for 30 minutes, or until garlic is soft.
Set the oven to broil. Slice the loaf of bread in half horizontally, and place cut side up on a baking sheet.
Squeeze the cloves of garlic from their skins into a medium bowl. Stir in the butter, parsley, and Parmesan cheese until well blended. Spread onto the cut sides of the bread.
Broil for about 5 minutes, until toasted



Filet Mignon with Rich Balsamic Glaze

What you need
2 (4 ounce) filet mignon steaks
1/2 teaspoon freshly ground black pepper to taste
salt to taste
1/4 cup balsamic vinegar
1/4 cup dry red wine

What you do:
Sprinkle freshly ground pepper over both sides of each steak, and sprinkle with salt to taste.
Heat a nonstick skillet over medium-high heat. Place steaks in hot pan, and cook for 1 minute on each side, or until browned. Reduce heat to medium-low, and add balsamic vinegar and red wine. Cover, and cook for 4 minutes on each side, basting with sauce when you turn the meat over.
Remove steaks to two warmed plates, spoon one tablespoon of glaze over each, and serve immediately





Strawberry Avocado Salad

What you need:
2 tablespoons white sugar
2 tablespoons olive oil
4 teaspoons honey
1 tablespoon cider vinegar
1 teaspoon lemon juice
2 cups torn salad greens
1 avocado - peeled, pitted and sliced
10 strawberries, sliced
1/2 cup chopped pecans

What you do:
In a small bowl, whisk together the sugar, olive oil, honey, vinegar, and lemon juice. Set aside.
Place the salad greens in a pretty bowl, and top with sliced avocado and strawberries. Drizzle dressing over everything, then sprinkle with pecans. Refrigerate for up to 2 hours before serving, or serve immediately.


Cafe Brulot Spiced Coffee

What you need:
3 tablespoons sugar
1 teaspoon Archer Farms™ ground cinnamon
1/4 teaspoon Archer Farms™ ground nutmeg
2 cups brewed Archer Farms™ coffee
2 tablespoons whipped topping

What you do:
In small saucepan over medium heat, combine sugar, cinnamon and nutmeg. Heat to dissolve sugar, stirring frequently.
When sugar is dissolved, slowly add coffee in a thin stream, stirring constantly, until heated through.
Top each serving with whipped topping and a sprinkle of cinnamon.

Roast beef and Yorkshire Pudding. So easy, a chimp could do it, but everyone thinks you're a culinary genius. E me if you want the recipe.

Filet mignon (not sure if I spelled that right) with potatoes and salad. He'll feel really good after finishing it. (And btw he's really cute)
