You don't need to buy it. Emeril gives his essence recipe on Food Network.

Emeril's Essence
Recipe courtesy of Emeril Lagasse

Ingredients
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Directions:
Combine all ingredients thoroughly. Store in air-tight container.

It's good because it has basic spices that work well in many different foods.

initially I think he used it because it was a product that he sold; but you have to remember that when emeril started on the food network, people were not as open to using lots of spices in their cooking. essence was an easy way to achieve taste in some of the bland cooking that could be found in the US. He has never presented the product as some sort of secret concoction, instead he even gave the ingredients on the food tv web site

He adds essence to everything because it makes "US" think we need it and will therefore buy it making him more money. You can make your own blend easily, but I have seen his brand for sale at linnens and things, and specialty cook stores.
Ingredients needed:

5 tablespoons sweet paprika
1/4 cup salt
1/4 cup garlic powder
2 tablespoons freshly ground black pepper
2 tablespoons onion powder
2 tablespoons cayenne
2 tablespoons dried oregano
2 tablespoons dried thyme

Combine all the ingredients in a small mixing bowl and blend well. Store in an airtight container in your spice cabinet for up to 3 months.

Because it's awesome. There are different Essence varieties, Southwestern, Bayou Blast, Original. You can buy them at pretty much any grocery store in the spice aisle. I like Bayou Blast because it's a little spicy and has great flavor.
