1 (6 ounce) can tuna, drained and flaked
2 tablespoons mayonnaise
1 pinch salt
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
2 slices whole wheat bread
2 teaspoons chopped dill pickle
1/4 cup shredded sharp Cheddar cheese
DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Place bread slices in the oven to toast while it preheats, and while you make the tuna salad.
In a small bowl, mix together the tuna, mayonnaise, salt, balsamic vinegar, mustard and dill pickle until well blended. Remove bread from the oven, and pile the tuna mixture onto one slice. Sprinkle cheese over the other slice of bread.
Bake for 7 minutes in the preheated oven, or until cheese is melted and tuna is heated through. Place the cheese side of the sandwich on top of the tuna side. Cut in half and serve immediately.

Mix a tin of tuna with mayo and add onions if you like or relish. Then spread the tuna on top of an open faced english muffin or a bun and put a slice of cheese on top and put it in the oven till the cheese melts. Thats the way all the restaurants I have worked at over the years make tuna melts.
Enjoy!!

When I make them, I use a Kaiser roll, put some tuna on it, then top with cheese and put in the oven at about 300 or 350 for a few minutes till the bun is toasted lightly and the cheese is melted.

This is how I did mine this afternoon. Combine diced celery, onion and mayo with albacore tuna. Melt some butter in a skillet, place the bread in it, place a slice of Swiss chees on the bread, pile the tuna over, add pepper, a slice of cheese and the top piece of bread. Cover and cook like a grilled cheese. Flip carefully and do the other side (you may add a bit more butter at that step).

Creamy Tuna Melt:
20 min 10 min prep
4 servings
2 teaspoons vegetable oil or butter
1 cup ricotta cheese
1 small onion, diced
1 cup celery, diced
1 (170 g) can albacore tuna, flaked (undrained weight)
1/4 cup low-fat mayonnaise
1 tablespoon lemon juice
1 garlic clove, minced
1 stalk broccoli florets, diced
2 bagels, sliced in half
1 cup cheddar cheese or mozzarella cheese, shredded
1. Place broiler rack in position under broiler and turn on broiler.
2. Saute garlic, celery and onion in a small amount of oil or butter in a skillet. Cook until onion is just tender.
3. Drain tuna and add to skillet along with ricotta cheese, broccoli, mayonnaise, and lemon juice. Cook long enough to warm ingredients through, perhaps 3 minutes, stirring frequently.
4. If you like your bagels to be a bit toasted, place them under broiler while tuna mixture is warming up.
5. Place bagel halves, split side up, in baking dish. Spread tuna mixture over top covering all and sprinkle cheese over top of mixture.
6. Broil 2 or 3 minutes, until cheese melts.
7. Serve at once.
8. Broil 3 to 4 inches from the heat until the cheddar melts, about 5 minutes.

Ingredients
1 Diced onion
3 clove Garlic, diced
1 6 oz Can tuna, drained
2 tbsp Olive oil
Dill to taste
Spicy mustard to taste
2 slices Bread
1 Slice cheese
Preparation
1. Heat the olive oil in a large saute pan, then add onions and garlic. Saute until translucent.
2. In a separate bowl, mix the onions and garlic with the tuna. Add spicy mustard (instead of mayo) until mixture is a spreadable consistency. Add the dill, and mix in well.
3. Spread on a piece of bread, top with slice (or slices) of cheese, and another slice of bread. Toast it lightly in the saute pan, turning once. Serve warm.
4. Cook's Notes: For a healthy choice, use tuna packed in water. This is really good with soup - try a cream of potato, with some extra crushed garlic, and a little bit of dill.
