If you are looking for something with a great cinnamon flavor...these are AMAZING sugar cookies!!!!

1 cup sugar
1/2 cup margarine
1 large egg
1 teaspoon vanilla
1 1/2 cups flour
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
cinnamon sugar
In a mixer bowl, cream together sugar and butter; beat in egg and vanilla.
Combine flour, cinnamon, baking powder and salt.
Add to butter mixture.
Blend well.
Cover and refrigerate 2 hours or till firm enough to roll into balls.
Shape dough into small balls about 3/4-inch in diameter.
Roll in cinnamon sugar to coat.
Set cookies 1-inch apart on lightly greased cookie sheets.
Bake at 350° for 10 minutes or till the edges are lightly browned.
Cool slightly on pans, then remove to racks to cool completely.

Brown Sugar Cookies (with cinnamon)
6 Servings

1 1/2 c brown sugar,frimly packed
2/3 c shortening
2 eggs,large
2 T milk
1 T orange rind,grated
2 t baking powder
1 t cinnamon
1/2 t cloves
1/4 t salt
2 c unbleached flour
1 c raisins
1/2 c nuts,chopped, if desired

Cream sugar and shortening until light and fluffy. Beat in eggs, milk and orange rind. Stir togethr baking powder, spices, salt and flour. Mix into sugar mixture. Stir in raisins and nuts, if used.
Drop dough by teaspoonfuls onto greased cookie sheets. Bake at 350 degrees F. about 10 to 12 minutes, or until done. Remove from baking sheets and cool cookies on rack. Store in airtight tins.

Ingredients:

1 cup sugar
1 cup firmly packed brown sugar
1/2 cup shortening
1/2 cup margarine or butter, softened
1 teaspoon vanilla
1 egg
2 cups Pillsbury BEST® All Purpose or Unbleached Flour
1 cup Hungry Jack® Mashed Potato Flakes
1 teaspoon baking soda
1/2 teaspoon salt
1 cup flaked coconut
1/2 cup chopped nuts, if desired

Preparation Directions:
1. Heat oven to 375°F. In large bowl, combine sugar, brown sugar, shortening, margarine, vanilla and egg; beat well. Lightly spoon flour into measuring cup; level off. Add flour, potato flakes, baking soda and salt; mix until thoroughly combined. Stir in coconut and nuts.

2. Shape dough into 1-inch balls; place 2 inches apart on ungreased cookie sheets. Flatten each with bottom of glass dipped in sugar.

3. Bake at 375°F. for 6 to 8 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets. Store in airtight container.

Serving size:
5 dozen cookies

3cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened
1 cup sugar
1 egg, beaten
1 tablespoon milk
Powdered sugar, for rolling out dough

Sift together flour, baking powder, and salt. Set aside. Place butter and sugar in large bowl of electric stand mixer and beat until light in color. Add egg and milk and beat to combine. Put mixer on low speed, gradually add flour, and beat until mixture pulls away from the side of the bowl. Divide the dough in half, wrap in waxed paper, and refrigerate for 2 hours.

Preheat oven to 375 degrees F.

Sprinkle surface where you will roll out dough with powdered sugar. Remove 1 wrapped pack of dough from refrigerator at a time, sprinkle rolling pin with powdered sugar, and roll out dough to 1/4-inch thick. Move the dough around and check underneath frequently to make sure it is not sticking. If dough has warmed during rolling, place cold cookie sheet on top for 10 minutes to chill. Cut into desired shape, place at least 1-inch apart on greased baking sheet, parchment, or silicone baking mat, and bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time. Let sit on baking sheet for 2 minutes after removal from oven and then move to complete cooling on wire rack. Serve as is or ice as desired. Store in airtight container for up to 1 week.

3/4 cup butter/margerine softened
1 cup sugar
2 eggs
1 tsp vanilla or 1/2tsp of lemon extract
21/2cups of flour-not self rising
1tsp baking powder
1tsp salt thoroughly mix shortening,sugar,eggs and vanilla blend in flour, baking powder and salt. cover and chill at least 1 hr. set oven at 400degrees roll dough in 1/8 inch thick roll and cut into small cubellike peices. put on ungreased baking pan and bake for 6 to 8 min.
