If you want to make crispy chips you have to slice the potato thin and fry them to almost 75 % done remove let them strain and cool , then fries again until done.remove salt and strain.enjoy!

In a large heavy saucepan, fill oil no more than halfway and heat the oil to 350 degrees F.
Add the potato slices in batches. Fry until light golden brown, about 2 to 3 minutes. Drain on paper towels, season with salt, and serve.

These are, of course, low-fat
Ingredients:
1 unpeeled baking potato (weighing about 1/2 pound)
2 T fat-free Italian Dressing (bottled)
salt if desired
Servings:
35-45 slices
Directions:
Preheat your oven to 500 degrees. Lightly spray a cookie sheet with vegetable cooking spray OR use a very light coating of cooking oil.
Slice the potato crosswise into very thin slices. Put the slices in a bowl, add the dressing, and toss the slices around until evenly coated. Arrange the potato slices in a single layer on the pre-greased cookie sheet.
Bake about 10 minutes on one side, turn each slice over and bake about 10 minutes more. Potato chips should be lightly browned on both sides. Watch carefully, removing slices as they brown and placing them on a large sheet of aluminum foil to cool. If you want salt, it's best to add it immediately after removing the potato chips from the oven.

1. Heat deep fryer oil to 360 degrees.
2. Peel and slice large baking potatoes. Slice thinly, madolin slicer works best.
3. Place single layers of potatoes into fryer and fry until golden brown.
4. Remove chips from fryer and drain on paper towels, salt. Shaking chips in a brown paper bag with salt is a good way to remove some oil and season.
Alternative
1. Pre-heat oven to 400 degrees.
2. Toss sliced potatoes, no thicker than 1/8 inch, in extra virgin olive oil and desired seasoning, I like garlic salt best.
3. Spread potatoes on baking sheet and bake until golden, 10 to 15 min, flip chips and bake addtional 10 to 15 min, baking time varies based on chip thickness and desired crispness.

700 g potatoes
1 liter boiling stock
2 tablespoons vegetable oil
Preheat the oven to 220 degrees celcius.
Cut the potatoes into thick chips. Plunge into a pan contaning the boiling stock and cook for 5 minutes, until just tender.
Drain in a colander. Allow to cool slightly.
Put the oil in a plastic food boc and CAREFULLY toss the chips in the oil.
Transfer the chips to a lightly greased baking tray and bake for 10-15 minutes, turning them once or twice, until golden and crisp. Sprinkle with paprika or salt to serve.

you clean your potatoes, you slice your potatoes very thin, then you dry them on like paper towels. make sure they're very dry. heat up oil in a deep fryer. put in one chip to test if the oil is hot enough. then put in the rest until they're golden brown, take them out and rest them on paper towels to soak up excess oil. salt or flavor immediately after coming out of the fryer so that salt sticks.
