Full name is "mojo picon" if that helps.
There's probably a dozen different family recipes out there, but you could try...
INGREDIENTS:
5 cloves garlic
1 teaspoon cumin seeds
2 small dried chillies (smoked poblanos would be nice, or jalapeno or birdseye if you want real heat)
pinch of salt
3-4 tablespoons breadcrumbs
1 teaspoon hot paprika
1 teaspoon sweet smoked paprika
2-3 tablespoons red wine vinegar
4-5 tablespoons olive oil
few dribbles of water, as needed
PREPARATION:
Using a mortar and pestle, grind the cumin and chilis with the salt.
Add garlic and mash to a fine paste.
Add paprika, vinegar and oil, and continue to blend.
Add breadcrumbs and keep on mashing.
Gradually add water until desired consistency is reached.
Serve with Spanish cheese (Majorero is nice), or over boiled potatoes, with crusty french bread, on fried fish.
