The thing is I am here in America as an AuPair and my question really is should I leave my family and my life in Germany behind? I really love him but I dont know if I can give up everything.

In your heart you know if its a good choice. If you're questioning whether his ethnicity is a problem, you probably thought of that when you started dating and it was okay then. If you have children, can you agree on what faith they'll be raised in (if any)? Is the different ethnicities a problem for either set of parents? If never a problem before, why now?
When you say "I would like to marry", I think you answered your own question.
