Sassy's Pork Schnitzel
4-6 servings 15 min 5 min prep
6 pork cutlets
1/4 cup flour
1 teaspoon salt
1/2 teaspoon pepper
1 egg, well beaten
2 tablespoons milk
3/4 cup dry breadcrumbs or cracker crumbs
1 teaspoon paprika
Sauce Mixture
1 cup chicken broth
2 tablespoons flour
1/2 teaspoon dill
1 cup sour cream
Pound Cutlets to 1/4 inch thin.
Mix flour, salt and pepper, and coat meat.
Combine egg and milk, and dip cutlets into this mixture, and then in the breadcrumbs that have been mixed with the paprika.
In a large skillet, add 2 TBSP oil, and brown the pork for 3 minutes on each side.
Remove from skillet and put in warm oven.
Pour the broth into the skillet, scraping to loosen the drippings.
Blend the flour and the dill into the sour cream.
Stir the sour cream into the broth and mix well and cook until thick.
Serve with Cutlets.

if you have powdered mix for onion soup (you know, it comes in pouches), stir that into the sour cream and sit in the fridge covered for a while -- then spoon over the sautee'd chops.
I like to sautee onions in the pan in a little virgin olive oil, until they are carmelized on the edges, set them aside and pan sear the chops in that seasoned pan at high temp. as soon at the chops are well browned on each side but still pink in the middle, cover with the onion, put a tight lid on the pan and turn the heat off (or down way low) and hold until the meat has been steamed to perfection (maybe ten minutes max). Serve with a little salt & pepper... some root veggies steamed with a little butter, and a baked yam or potato.. you've got a meal

Smothered Pork Chops
Ingredients
Any cut of Pork Chops
Half a white or yellow onion
One Red Pepper
Minced garlic
1 can cream soup (I like cream or mushroom)
1 can gravy
3-4 cups of water
Seasoning (salt, pepper, sage, garlic powder)
Olive Oil
Add about 3 tablespoons of olive oil to a deep pot (about 4 inches)
Add minced garlic, sliced onions & red peppers & sautee
Season pork chops
Take out the garlic, onions & peppers & place to the side in a bowl
Brown each side of the pork chops (1-2 minutes per side, med flame)
Add all the browned chops to the pot (probably will have to put them on top of one another)
Place the garlic mixture on top of chops
In a measuring cup or bowl mix the water, cream soup & gravy.
Pour this mixture on top of the chops.
Cover pot & bring to a boil.
Once it's boiled, turn flame down low & let it simmer for about 2-3 hours. The longer it simmers the more tender the meat will be.
Serve over rice or with mashed potatoes along with a veggie if you like & enjoy.

Put the chops in a cast iron skillet after rubbing with fresh sage
brown on both sides
put chops and skillet in 400 degree oven for about 10 min
Take chops out of skillet
place skillet on burner and add 1.5 C heavy cream and more fresh sage
scrape bits off bottom
pour over chops

Try mixing cream of celery or mushroom soup, 1/2 c sour cream and some (to taste) dried onion soup mix. Thin with milk to desired consistancy and heat and serve with your chops. This is also tasty with meatballs.

I just marinade mine in Louisianna Supreme ( similar to Dale's, but no where near as salty) then either grill over hot coals or on the foreman.....Use a little marinade as a baste during the last 5 minutes or so. If you must have a sour cream dip, just mix 1 container w/1 pkg Lipton onion soup mix.....

I just fry pork chops & serve them with applesauce & sour cream & chive potatoes or scalloped potatoes. I don't like adding a lot of sauces & stuff to my food. I prefer to cook to bring out the natural flavor of food or cook to enhance the true flavor, not cover it up...

Make a basic Gravy with Flour, Pork chop pan drippings, and a bit of either cream or milk. Season it with some black pepper... It's PRETTY TASTY!!!

I would consider making broccoli or carrots. These go very well with pork. You could also make white rice. the glaze on the white rice would be delicious. Good luck cooking
