I'm trying to reach the fullest potential in finding a job. -Finished university and surely should be doing something at that level?
Or not- Do I want to sit behind the computer all day and go to conferences where they discuss how to optimalise the coffee machine? - Don't get me wrong there are " uni-" jobs important for health care or environment- but this may not me for me.
Let me be happy. Where can I find happiness? Is it really important to find a jobs that constantly triggers my mind and brings stress?

Can wanting to much make you unhappy?

Try shooting for the moon, cause if you fall short, you will still be among the stars.

I truly believe that you will find happiness by choosing the career in your life that would make you the happiest; not a standard corporate job (which doesn't sound like what you want anyway) Find happiness in the things you always have loved and dreamed of doing- not for the money or status, just because you love to do them. Then you will feel accomplished and happy with your life. Your last question is a difficult one. It depends on what you are wanting to happen in your life. No one is perfect and yes, if you put too much pressure on yourself, that is not healthy for you. There are tons of jobs out there that do not involve a great deal of stress. But the idea of stress is a relative idea. I would just say, do what you really WANT to do, the happiness will follow.

I understand what you're saying here. But this is what I think you need to realized; you need to do what makes you happy. And that may mean that doing a job that makes you happy or that you feel is important will pay you less money but who cares. Money can't make you happy and there's proof in what you're talking about. Think about what kind of job you'd like to do that would make you happy and do it. Forget about sitting in front of the computer all day. :) Good Luck.
