Baked Zucchini
2 medium zucchini
2 tablespoons butter, melted (or olive oil)
1 tablespoon fresh oregano or 1 teaspoon dried oregano
1/4 cup parmesan cheese, grated
salt & pepper
Slice zucchini in 1/4 inch slices.
Toss with melted butter and oregano.
Arrange in a single layer on a greased baking sheet.
Sprinkle with parmesan cheese.
Bake, uncovered, at 350 degrees F for 35-40 minutes.
Season to taste with salt and pepper.
Roasted Potatoes and Peppers
1 1/2 lbs tiny new potatoes
1 onion
1 bell pepper (red, yellow or orange)
1 1/2 tablespoons olive oil
1 garlic clove, crushed (or more)
1 tablespoon rosemary, fresh, chopped
salt & freshly ground black pepper
Preheat oven to 375°F (190°C).
Wash potatoes.
Halve or quarter larger potatoes.
Cut onion into eight pieces.
Cut peppers into one-inch pieces.
Combine oil and seasonings in a plastic bag. Add vegetables and shake to coat with seasonings.
Place in shallow dish and bake uncovered in the oven, until potatoes are tender, about 40-45 minutes, stirring once.
Mixed Fruit and Spring Greens with White Chocolate-Orange Vinaigrette
Salad:
1 (15-ounce) can Mandarin oranges
5 ounces pre-washed spring greens
2 cups fresh strawberries, quartered
1/2 pint blueberries
Dressing:
1/4 cup Champagne wine vinegar
1/3 cup reserved Mandarin orange juice
1/4 teaspoon salt
2 tablespoons sugar
1/4 cup white chocolate chips
3 tablespoons olive oil
Drain Mandarin oranges and reserve juice. In a large bowl, combine salad greens and fruit. Set aside.
To make the dressing, in a small saucepan over medium-low heat, combine vinegar, 1/3 cup reserved Mandarin juice, salt, and sugar. Gently heat until sugar is dissolved. Remove from heat. Stir in white chocolate until melted. Set aside to cool. Do not refrigerate, as white chocolate will set.
Before serving, slowly whisk in olive oil. Spoon desired amount over salad and toss. Serve remaining dressing on side.

If you have potatoes, how about twice bakeds? Just scoop out the innards, add some sour cream and garlic salt and pepper, stuff them back in and add cheddar. Bake until melted and warm.
