I've done it many times after trying to replicate a dish I had in a fancy restaurant. It was rigatoni with chourico, fresh basil, goat cheese, and a fresh tomato sauce.

I usually sautee the chourico until it starts to caramelize and then add some fresh minced garlic. Dump in a can of whole peeled tomatoes, tomato paste, and fresh basil leaves. Break up the tomatoes and season to taste (hot pepper flakes, salt, pepper etc. and anything else you like). Boil up your pasta... Toss cooked pasta with the sauce and crumble up lots of goat cheese and shred some basil leaves over the top just before serving. Don't knock it 'til you've tried it.

You can buy it at the grocery store. It is usually spelled Chorizo.

It will be in the sausage part of the meat department, or in the mexican section of a cheese display.

My personal favorite is to saute the chorizo with sliced pre-boiled potatoes until golden brown and a bit crisp, then stir in beaten eggs and scramble.
