Charlie Haskins Coney Sauce No. 7

I just put this one together from accumulated knowledge -- I have numerous other coney sauces but this one might just be the best one. I thought about also adding some Worcestershire sauce but decided that it had enough flavor already.

This recipe is dedicated to my pal Charlie Haskins who loves good Appalachian cooking and is a top chef himself.

Ingredients:
2 1/2 pounds ground chuck
15 ounces chicken broth, canned
2 large sweet onions, chopped
1 large green bell pepper, diced
6 large cloves fresh garlic, minced
1/2 cup ketchup (I use Red Gold brand)
2 cups water
2 tablespoons instant minced onions (dried onion flakes)
3 tablespoons prepared yellow mustard (I use Heinz brand)
1 tablespoon kosher salt (or 1 1/2 tsp. table salt)
1 tablespoon chili powder
1 teaspoon chipotle chili powder (see directions for substitutions)
2 teaspoons cider vinegar
1 teaspoon ground cumin
2 tablespoons dried oregano
6 ounces tomato paste
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground red pepper
1/2 teaspoon ground cardamom
2 teaspoons sugar

Method:

1. In a large cooking pot, pour in the chicken broth and water and add the ground chuck, breaking it up some as you put it in. Bring to a boil.

2. Add all other ingredients EXCEPT for the sugar and blend with a large spoon. Reduce the heat to a VERY low boil and allow the sauce to simmer for a total of 3 hours, covered, stirring frequently.

3. Add the sugar in the last 30 minutes of cooking time -- if you add it sooner it will probably scorch the sauce.

4. Serve over hot dogs, which are even better topped with finely shredded sharp cheddar cheese on steamed buns.

5. SUBSTITUTIONS: The chipotle chili powder is a KEY INGREDIENT so, if you can't get it use one of the following.... a canned chipotle chili pepper (chopped) with some of the sauce that clings to it, OR, 1 teaspoon of regular chili powder and 1/8 teaspoon of Liquid Smoke. 1 pound ground beef
1 medium onion, chopped
2 tablespoons chili powder
1 teaspoon salt
3/4 teaspoon oregano
3/4 teaspoon cumin powder
1/4 teaspoon red pepper flakes, optional
2 cups water
Tomato sauce to coat hot dogs, optional


Directions:

Brown ground beef with onions. Drain. Add spices. Mix well. Add water. Simmer for 1 hour. Coat grilled hot dogs with tomato sauce, if desired. Then place in bun, spoon hot Coney Island sauce over the hot dogs and top with grated cheese.
