I would guess it's because turkeys don't lay as many eggs, and the ones they do lay are used to produce more turkeys! Whilst a chicken might lay approx. 300 per year, a turkey might produce about 100. So the turkey eggs are needed to hatch, so that they can get killed towards year end!

They often are at Framers markets, but, unlike chickens, turkeys only lay for a short time each year, and the producers usually only keep enough breeding birds to get the turkeys that will be on your table next Christmas. So yes, you can buy them, but they aren't that common, also they are rather large, and recipes are all based on chicken eggs which have specific size grades allocated.

I didn't know one could buy turkey eggs. I do know the news said bird flu has spread all over now and is really affecting the turkeys.

Hi.maybe they have not thought it will bring in millions of pounds.
Since around 15 years ago I have not eaten turkey after the conditions bernard mathews turkeys were said to be in & how they were treated.I am not a vegaterian however my conscience will not let me eat any animal food due to the way they treat them.
