Cut up two or three lemons and a whole head of garlic and stick them all up the inside of the chicken.

Rub butter into the skin. If you want to get fancy then slice one lemon and put the slices underneath the skin on the breasts - you have to separate the skin from the breast by hand. Some people put herbs there.

Voila!

Cook for 1 3/4 hours or 2 hours as per the package's roasting instructions (and adjust for fan-assisted or convection ovens as necessary). There's no need to put foil on it. Oh and a meat thermometer is a good idea to make sure it's done.

clean under water, pat dry. cover the skin with olive oil, then with your hands rub Melange de France (a french dried herb mix) all over that sucker. inside i put in a few cloves of garlic, outside of the roasting pan i arange cut up potatoes and carrots. roast at 360 for 1hr. the melange de france comes from the gourmet shop,Oil & Vinegar. and if you cant find that or get to it, mccormick has a french provencal seasoning mix. good luck!
