Keep your veggies simple. Steamed asparagus or broccoli would be perfect. Add a little julienne red pepper or carrot for color. Nothing with any sauce. Use either frozen (thawed and drained well) or canned corn, drained well. You can add just about anything to this: diced red or green peppers, sliced black olives, sliced radishes, water chestnuts. For dressing, mix 1/4 C vinegar and sugar to taste, (mix really well) and toss. Refrigerate for at least an hour.

i would throw some broccoli or peas in the noodles romanoff. i like to cook things all in one pot so i don't have to clean up extra later. :)
