If your choice is to eschew alcohol, try reducing bottled grape juice in a non-stick pan over medium-high heat until it reaches a syrupy texture. A bit of honey added for sweetness and richness and if your diet allows, some cold sweet butter whisked into the emulsion to make it shiny and full-flavored would be a reasonable if not accurate substitute.
This process works for any juice, i.e. apple, pear, orange, etc. Use them to make various non-alcoholic sauces for your favorite dishes.
The addition of your favorite herbs and/or mustards would enhance each sauce.

I don,t know of anything without alchohol that would work, after all it is a marsala sauce. I have substituted regular wine, adding a little honey for a sweeter marsala, but I would think there would have to be wine to get the flavor you are loking for.
Why would the alchohol be a problem? All of the alchohol cooks out once it is brought to a boil. And if you are living here in the bible belt and they won't let you buy wine on sunday, then use cooking wine, not quite as good and a little salty but better than nothing, and they will sell that.

I make it often and it is the only cooking wine I use. I have used the Marsala wine and keep going back to the cooking wine. I use 1/2 cup of chicken broth and 1/2 cup marsala cooking wine. (Beef broth if your doing steak marsala) Good luck and enjoy Marsala is over the top Delicious

There's something about Marsala that's unique. If you could get the non-fermented juice from Sicily you might be able to make do, but as it is, if you want the sauce, you'll have to risk the Marsala, though you might be able to boil or distill off the alcohol. The boiling point of alcohol, of course, is a lot lower than that of water, so it's not that hard.

The cooking possess will remove the alcohol if your sauce is reduced. If that isn't acceptable try white grape juice. Your sauce won't taste as complex; but, no one should turn down your dish for any reason after all you made the effort to create it . . . for them!

If you can make a dish that uses marsala wine, you must be a cook cook. A good cook knows that the alcohol will burn off, leaving the flavor intact. Are you an alcohol paranoic?
