Can you explain step by step? I love fried chicken but I don't know how to fry it exactly.

Hi, here is an easy recipe I found on www.foodnetwork.com for you. There are many others if you are feeling adventurous. Just type in "easy fried chicken"!

6 to 8 pieces skinless white chicken meat with or without bones
1 cup all-purpose flour
1/3 to 1/2 cup solid vegetable shortening
Salt and fresh ground black pepper

Trim off all fat and discoloration, etc. with kitchen shears or a sharp knife from the chicken. Wash under cold water. Put the flour into a plastic bag. While the pieces are still very wet, place them 1 at a time into the flour. Shake the bag to coat each piece. Melt about 1/3 to 1/2 cup of shortening in a pan on medium heat. Shake the bag again to keep the pieces from sticking together.
When the shortening is melted and very hot, remove the chicken from the bag. Gently shake off the excess flour and lay into the hot fat. When all the pieces are in the pan, cover with a lid and allow to fry about 5 to 7 minutes. Remove cover and check each piece to see how brown it is. When it is lightly golden brown, turn to fry the other side. Add salt and fresh ground pepper to each piece on the browned side. Cover again and allow the other side to brown. Season the second side. At this point, you may remove the cover and continue to fry the chicken to the desired "browness" you prefer. Turn often.

It should be nicely browned with a very crisp outside and a moist, tender inside. You may want to reduce the heat a little after you have browned the second side. Boneless, skinless chicken cooks much faster than meat with the bone in. Place the fried pieces on a wire rack covered with a paper towel to drain off the excess grease. For best flavor and texture, serve about 7 to 10 minutes after you remove from the pan.

I have been a cook for years, I have created this recipe by trial and error, this makes the best fried chicken!

Well it isn't easy (nothing good ever is), but the best way I have found is as follows:

Select a small 3-4 lb bird. Cut up chicken, bone the breast portion and cut each breast into 4 strips. Take chicken and soak overnight in salted buttermilk.

Here's the trick, season LIGHTLY w/salt and pepper and pressure cook the dark meat only (do not pressure cook the white meat, it only dries it out) at 10 lbs for 10 min, this cooks the chicken so you can fry it at a high temp to keep it crisp.

Breading:
3 cups all purpose flour
1 tsp poultry seasoning
1 tsp black pepper
2.5 tsp salt
.5 tsp garlic powder
.25 tsp cayenne

blend all ingredients well

Heat deep fryer with a mixture of half corn oil and half shortening to around 350. Be sure to have the oil deep enough to submerge the chicken in the oil. I actually prefer all lard, but I have yet to find a decent comercial brand, but if you have home rendered, feel free to use it, it is much better.

Dredge all of the peices in seasoned flour, then dip into buttermilk then back into the seasoned flour, fry a few peices at the time, and the oil should cover the peice of chicken, otherwise they won't cook evenly. Don't crowd so the oil stays hot, if the temp of the oil drops too much the chicken will absorb grease. Be sure to turn the peices half way. Drain on toweling. No worry of uncooked chicken, it was pre cooked, you only have to fry it to crisp the breading!

Makes the best southern fried chicken!

The key to good fried chicken is using a high enough heat that the chicken doesn't soak up all the oil and become greasy, but low enough that you don't burn the outside of the chicken, leaving it raw inside.

You'll probably have to make a few batches before you get it right as different stoves work differently so it's hard for me to tell you exactly where to set your stove. (you can get a thermometer to tell you exactly what temperature the oil is at though).

As for how to make it, there are tons of different ways so it depends on what you like. Try the food network website and look up fried chicken and there are probably 50 different recipes. Or just put "fried chicken" into any search engine and you'll come up with tons of them.

Are you after fried chicken like KFC or just pan fried (AKA: the quick way to cook)????

If it's just to cook it fast that's easy.

Put your stove top to medium temperature, add a little butter or oil to the pan and give it a minute to heat up. Put your piece of chicken in the pan (you can season it before you put it in there if you want), cook it for a few minutes (say 5 or so) and then lift it up using a spatula/fork and see if it's no longer pink. If it's turned color (white/brown) you can flip it over and cook the other side for the same amount of time. Before taking it out of the pan, use a knife to cut down the center of it and pull it apart a little bit so you can see if it's still pink in the middle or not. It's cooked when there is no more pink.

If you want to season it up, after you flip your chicken, pour a little bit of orange juice or italian salad dressing over it and continue to cook..... if it dries up on the bottom of the pan (and it likely will) pour a little bit of water into the pan and mix it around... This will create a little "gravy" like substance..... it's good...I've done it many many times and everybody is a fan of it!

I have a developed recipe that is loved by all.

Normally you would roll your chicken then fry it in a pan with oil/.

In stead roll your raw chicken in corn starch then dunk it in beaten eggs then the final roll in INSTANT Potato's, deep fry it in a larger sauce pan and ohhhhhh is it good. Now you can season to choice by adding your spices in either the egg dip or corn start or instant potato's. and to step it up another notch you can flavor inject the chicken as well for an even better taste and tenderizing.
